I think a good strategy would be 2 vs 2 cooking from the 1914 book. Whether each team get's their time in the kitchen alone, or all 4 at once is a matter of logistics for which way makes a better video, and is more fun for everyone.

@op3129 I was as shocked as Ben to see the bacon. I immediately started reading about mirepoix, hoping a literal translation would help me understand the matter. Nope. Mirepoix is thought to be the last name of a chef who -- maybe -- popularized the combo's use. Putting aside all the regional variations of which veggies are used, it seems there's mirepoix au gras and mirepoix maigre -- the first with meat. The second is what we commonly think of as mirepoix. Who would think a few diced veggies could get so complicated?

For home cooks: Avoid followng an Escoffier to a tee. For example when making broth, many home cooks have got the idea that bones are essential and go out of their way to get them. But Escoffier's recipe just listed bones cause all resturants had them as free left-overs. In fact, cheap cuts of meat often give more flavour. So you could settle for that if you don't have any bones already.

@@hmaz7637 most professional kitchens don't exactly need pressure cookers, we generally have the time and resources available to get everything done well before a service comes, so there's no need for the added time/people using one in the middle of a huge rush becomes a liability when they need to open it and forget the safety precautions. Braised tongue is one of my favorite dishes that I often make at home. EASY way to get the skin out, boil it with the tongue for about 20 mins on a pressure cooker. Than the skin will easily peel away. Then you can put it on a tomato sauce for another 20-40 mins depending on consistency. Lingua estufada here in Portugal

For variety. Add some pickling spice to the boil, and serve with horseradish and fried potatoes. Yum.

Tips from a French : The outer layer of skin come off reaaaaally easily when the tongue is cooked And yeah, normally, it take ~ a day to prepare it with different cooking temperature and ingredients inside the water (salt, than vinegar, than 3x water, ...) Fail one step and it's hard, chewy, barely edible, but when perfectly cooked it LITERALLY melt on the tongue (pun not intended :p)

Ben, James: Regarding the tongue, I have two words for you both: PRESSURE COOKER. Willing to bet you could have "braised" that tongue to near tenderness within an hour, giving you plenty of time to de-pressure, cool, and thinly slice it for your omellettes.

Etymology of 69 is (In the sexual sense), from 1888, as a translation of French faire soixante neuf, literally "to do 69." So called from the similarity of positions to the arrangement of the numerals.
