Today's dish is "Braised Eggplant with Minced Pork", here are the technical summary:
1. Steamed eggplants are healthier and less greasy, but they don’t taste as good as fried ones

Hi, just a suggestion, would be nice to have the voice over in Mandarin like how it was done previously with the english subtitle. Also, in very happy that you have also added English subtitles to the channels. Been watching your videos for years 😁

love the additional instructions / tips - eg. The white on the eggplant for age, and starch/vinegar for colour / nutrients. You're the best! keep up the great videos.

Note that Chef Wang uses the "roll cut" with the eggplant. With great respect, I would suggest that after steaming, the eggplant be tossed about in a little bit of oil in a super hot wok to evaporate some of the steam water.

I added white vinegar and corn starch before steaming but my eggplants still turned brown. Any ideas? The taste was perfect though but just didn't retain the purple eggplant color.

Hi Chef! If possible - could you add an ingredient list in the description box? It would really help ^^; When I encounter new ingredients, trying to identify the Chinese characters/name is difficult. It would be nice to copy and paste the name to see where I can source them in my country. And having to pause and rewatch /note down everything leads to me missing things when the video is faster.
