this is one of the most amazing culinary feats I've ever seen. Like, I generally think I can make stuff with enough practice as a novice, but this requires years of dedication and experience. it's amazing. congrats!!
'Squirell fish' is already hard to accomplish a good shape but the 'Coral fish' will be much harder to shape, but i try for sure. thanks Chef Wang for explaining all details, your techniques are amazing!

@@Whiskey.Tango.Actual as a Chinese I can confirm that we the Chinese use that same cleaver for anything and everything. From cutting vegetables, smashing garlics, to fruits and even meat.

Tip for people at home; scale your fish in a large basin lined with some kind of disposable liner (saran wrap, aluminum foil, garbage bags etc) or even better, do it outside - fish scales get _everywhere,_ are a pain to clean up and easy to miss. Once they dry they are stuck like glue to whatever surface they are on and I mean *stuck.* I still remember from scaling salmon at work years ago, sometimes several days and multiple showers later I would find scales still stuck to my elbow like scabs - only harder to peel off. Scaling fish at home where you can't just hose down the entire room afterwards is barely worth the clean-up in any circumstance. Great video!

I agree. I wouldn't scale all the fish I eat inside for all the money in the world. You never find them all and if you eat fish often there will always be a vague smell for a while after cleaning a bunch of fish indoors

Nice meme but it 100% depends on the fish. These carp have thick spines that will guide the knife and enough belly that you can just slice out the rib-cage in one piece. I'm pretty sure Chef Wang wouldn't filet a sole with his cleaver.
