From what I understood you couldn't technically overcook the onions. Alton Brown made it on Good Eats and if you're using an electric skillet you can just leave them on basically forever.

With the part about asking for parents, I think it's actually good advice. If my dad noticed that some of his alcohol went missing, he would (admittedly justifiably in my family) go straight to me and my sister and ask which of us drank it. I definitely started cooking with wine at a younger age than I could legally buy it, and the best way to go about it would have been for me to ask my parents every time I used it when I was in their house, in my opinion. Especially because if you're legally underage, the product is probably your parents' and so it's just more respectful to ask. It's a small thing, but I actually think he was more reasonable with that suggestion than he was given credit for. He may not be able to cook, but at least he's suggesting viewers be respectful to their family.

I appreciate him mentionning how this dish is not "fancy", as a frenchie also, it pains me to hear again and again people repeat that pretty much anything French has to automatically be "fancy", even when it's only a soup or a stew.

Tbh I think it has a lot to do with like chef culture in America, where because lots of professional chefs learn French techniques and learn under French teachers, they just assume everything French when it comes to food is Fancy or Luxurious

Jack's soup looks like the quick onions I fry up for sausages. Edit; Actually, no, I brown my peppers and onions more than that and slice them thinner. 1/4 inch max... and I would have salted them while frying to draw out moisture and make more caramelized goodness happen. Then again I learn from my mistakes, like forgetting to salt something ONCE. Never again!

17:57 I worked in a prison and ate lunch at the cafeteria run by the inmate chefs. Their french onion soup was delicious and made correctly. This looks like what they would have made later in the toilet.

Only recently discovered this channel but I like the format, feel like I can laugh at some ridiculous cooking and learn things in the process. I also really enjoy the addition of Chef Paul to this video, he has a grizzled jadedness about him that only comes with years and years of experience doing something, and that's always a treat to listen to. I think the actual vaperization process of alcohol takes way longer than what we normally cook for, so there's probably still quite a bit of it in most meals made with wine? Just like cemichally y'know. Probably still fine though

Jack is wrong on 90% of things but not on the thick onions. Trad french onion is a peasant food which was cooked with thicker onions. This where the quest for the michelin star fails. All flavor over texture which is just the wrong direction. Just because it's 'technique' doesn't make it correct.

Jack should invest in a mandolin (available at WAL-MART for about $10) to slice the onions thin. And he should've done his onions in batches or used a dutch oven to cook all of that (b/c that frying pan is *way too small* -- b/c Jack thinks he's dealing w/spinach, cabbage, or collard greens. And after 45 minutes, the onions are soft, but only the edges are browned. That said, this was one of his better dishes. Jack's cheese selections may have salvaged this onion blob. He really needs a mandolin.

This may be the best thing Jack's ever cooked. I'm a little afraid the chicken broth was from a can, which means after reducing there's already too much salt, which would mean the one time Jack adds salt is the one time he _shouldn't_ . I love how he ended up with two wrongs making a right with the cheese. Side note: if you do want some garlic flavor in onion soup, use bruschetta for the croutons (that's Italian bruschetta, not the bruschetta topping most Americans think of), which is basically just toast that you rub with a slice of garlic. No danger of burning like when you mix it with the onions (though you could also avoid that by _not putting the garlic in before the onion!_ which is how you're normally supposed to cook onion and garlic anyway).

are canned stock salted? i've never cooked with canned stock before, neither do i add salt to stocks i make. Anyway with the amount of parm he added i don't think he needed any salt Also adding the garlic to the instant croutons is a great idea, you would brush the croutons with a bit of oil anyway, so why not add garlic to your oil(not my thing but ,great idea)

@@pinbi7 The garlic croutons thing is pretty common, though I'm not sure how common it is specifically for onion soup. As for canned broth or stock, they are often heavily salted; even "low sodium" canned stock generally just means low in comparison to regular canned stock and still tastes noticeably salty. "No sodium" canned stock can actually be pretty hard to find, and, given how much of Jack's ingredients tend to be either super-common brands in the US - like McCormick spices and dried herbs - or just basic store brand - like the Great Value (Walmart store brand) cornmeal he used in the polenta episode - I kinda doubt he put in the effort to find no-sodium stock, which makes me worried for his heart after he also added salt _and_ parmesan cheese.

Dude, bring this guy back! He was so funny! You two together played well off of each other. I can tell at moments you were like... "come on... come on... get back on track" but by the end you were like- "do you, you're making magic. just do you..." This was fun. There should be 1 time every six months where you bring in a guy like this and do a power hour or just a cocktail. A Brian Tsao at nite! episode is too good. Keep it up!!!

yes, that's not French onion soup, rather American onion stew if there is such a thing. that kind of annoys me when I see people famous as beginners ruining a classic dish. like Swedish classic meatballs where they add mustard and some hp sauce to the batter.

The parmesan is almost a cheat in this case because of the way it tends to crisp up under a broiler. The cheese layer on a good french onion soup should almost be like a creme brulee--crispy on top and then melty underneath, so in that sense he kinda nailed it. It's probably tasty soup.

I love that Frenchie brought up the fact that sometimes you can just taste the interaction between certain ingredients without actually tasting them. If you know your ingredients pretty well, you can usually tell. Sometimes you have weird ones that actually compliment but

Worth repeating this comment because another chef needs to know this: What do you guys know?! Just because you’ve had years of training before you’ve had years of cooking in your home kitchen, read lots of books, apprenticed in the past with trained chefs, and then established yourself as professional chefs with years of experience, doesn’t mean you know more than a guy that wings it with tasty stale ingredients. I love stale ingredients. What’s wrong with rare chicken? Besides even if it’s possible to poison, possibly make sick, or even kill people, what’s wrong with having fun with risky activities. I love skydiving, freeway jogging, KZbin and TikTok challenges where you eat laundry soap. Risky activities make make life living….and possibly dying! You guys are just way too boring with being safe with ingredients. Live a little guys. Food poisoning is the spice of life!
