From what I understood you couldn't technically overcook the onions. Alton Brown made it on Good Eats and if you're using an electric skillet you can just leave them on basically forever.

With the part about asking for parents, I think it's actually good advice. If my dad noticed that some of his alcohol went missing, he would (admittedly justifiably in my family) go straight to me and my sister and ask which of us drank it. I definitely started cooking with wine at a younger age than I could legally buy it, and the best way to go about it would have been for me to ask my parents every time I used it when I was in their house, in my opinion. Especially because if you're legally underage, the product is probably your parents' and so it's just more respectful to ask. It's a small thing, but I actually think he was more reasonable with that suggestion than he was given credit for. He may not be able to cook, but at least he's suggesting viewers be respectful to their family.

Two chefs, no ego, just a deep love of cooking, and fun as all hell to listen to. Frenchie and Brian are the culinary equivalent of Carson and McMahon, they play off each other so well it's a riot. I've learned so much from Guga ,Brian and Frenchie it's crazy, I love their individual takes on food. If I ever subject myself to the torture of New York, I WILL be stopping by both these guys establishments, I have no doubt it'll be a blast.

Jack's soup looks like the quick onions I fry up for sausages. Edit; Actually, no, I brown my peppers and onions more than that and slice them thinner. 1/4 inch max... and I would have salted them while frying to draw out moisture and make more caramelized goodness happen. Then again I learn from my mistakes, like forgetting to salt something ONCE. Never again!

This may be the best thing Jack's ever cooked. I'm a little afraid the chicken broth was from a can, which means after reducing there's already too much salt, which would mean the one time Jack adds salt is the one time he _shouldn't_ . I love how he ended up with two wrongs making a right with the cheese. Side note: if you do want some garlic flavor in onion soup, use bruschetta for the croutons (that's Italian bruschetta, not the bruschetta topping most Americans think of), which is basically just toast that you rub with a slice of garlic. No danger of burning like when you mix it with the onions (though you could also avoid that by _not putting the garlic in before the onion!_ which is how you're normally supposed to cook onion and garlic anyway).

are canned stock salted? i've never cooked with canned stock before, neither do i add salt to stocks i make. Anyway with the amount of parm he added i don't think he needed any salt Also adding the garlic to the instant croutons is a great idea, you would brush the croutons with a bit of oil anyway, so why not add garlic to your oil(not my thing but ,great idea)

@@pinbi7 The garlic croutons thing is pretty common, though I'm not sure how common it is specifically for onion soup. As for canned broth or stock, they are often heavily salted; even "low sodium" canned stock generally just means low in comparison to regular canned stock and still tastes noticeably salty. "No sodium" canned stock can actually be pretty hard to find, and, given how much of Jack's ingredients tend to be either super-common brands in the US - like McCormick spices and dried herbs - or just basic store brand - like the Great Value (Walmart store brand) cornmeal he used in the polenta episode - I kinda doubt he put in the effort to find no-sodium stock, which makes me worried for his heart after he also added salt _and_ parmesan cheese.

Great! Your guest is a riot, bring him back! In culinary school, long ago, learning how to "sweat" onions down was a basic skill to learn early. Your classic FO soup had to be caramelized until the onions literally turned to caramel color goo in the pot, before adding any wine or stock. I always make mine with my own chicken stock, but other good stocks work. As for the mustard, well, I learned a technique were you put Colman's mustard on the toasted Holland rusk, or toasted bread, then add the gruyere and melt under the broiler or salamander. It does add a level of snap to the zuppa, but is not needed. Soups are one of my specialties, and watching Jack desecrate this was a joke, made only more enjoyable by you, and your guest. Thanks.🧅

17:57 I worked in a prison and ate lunch at the cafeteria run by the inmate chefs. Their french onion soup was delicious and made correctly. This looks like what they would have made later in the toilet.
