Ive seen people from pakistan prefer english dishes like shepherds pie and beef and suet dumpling stew to the dishes of france, its all relative after all. People like Kay and Jack make me look at my cooking in a new light. While I'm too damn old to ever be a "great" cook, I'm always looking to improve my skills and thanks to you guys giving actual expert chef advice I've learned tricks and tips that I never would have picked up on my own. Sorry Frenchie, I happen to love spring peas, maybe it's my English/Scottish blood, but they just taste good to me. If there was anything of value in NYC other than your establishments, I'd be happy to fly out there, but as much as I'd love to experience your cooking in person, there's nothing else there I'd like to see. I miss the museums and food back home in Chicago, but nothing short of a night out with Katheryn Winnick could get me to set foot back there. In every culture there are "staple" dishes that seem so simple, but it turns out they are far more complicated than it looks. The complications are in the "little" things, not ingredients so much, but in the tiny steps involved. if you grew up with them, it all seems so obvious but if you didn't it can seem baffling.
