For anyone worried about needing a blender, I make vegan butter regularly with an immersion (stick) blender and it works great! And I've found the trick for nice thick butter that doesn't separate is to not have any of the ingredients too warm, I melt the coconut oil only until it's almost melted, and it works every time! Thanks Jana!

I agree with everybody else: this was very useful. Vegan butter is pretty expensive and contains who knows what. Now I will know exactly what is in mine!

Update 1: I made it again, using half of the amount of the sunflower lecithin granules that I still have. It was p e r f e c t. ! Total yumness! Update 2: I also managed to fix the strong sunflower lecithin taste I got with the first batch by adding a quarter teaspoon of vegan lactic acid.

I just made your recipe with extra virgin canola oil, cashew milk and apple cider vinegar. I swapped the salt for a tbsp of Massel Chicken-style stock. One batch I left plain - so yummy! To the other half I added a tsp of garlic powder, a pinch of powdered fenugreek, a pinch of turmeric and a heaped tbsp of dried fenugreek leaves. It's heavenly delicious!!! Thank you so much for the base recipe. It really is very good!

I used the liquid Soy lecithin and it worked great! Not sure why it doesn't work for you, but I'm happy it did for me because it's all I have. :)
@laranadesign47644 жыл бұрын
I also have the liquid form and would rather not buy granules if I don't have to. Maybe it's due to having a high-powered blender, but I was scared enough that I was about to order the granules just for this recipe to be safe. Thank you for this comment!

Just a comment about Coconut oil..its either processed or UNPROCESSED (NOT UNFILTERED) So if you like coco-nutty taste and smell, the organic UN-processed and if making things like cheeses or butters use the processed type which has no smell.. Just thought I would add this for those people who are not familiar with dif types.

So, I finally made the butter BUT I didn't have refined coconut oil and I didn't have soy lecithin, only sunflower lecithin powder. Review: Yes, it definitely has a coconutty undertone to it. It didn't bother me because I love coconut. What bothered me was the strong lecithin flavor. Maybe because it was sunflower lecithin so next time I'll add half of the lecithin to try again. I do prefer sunflower lecithin for its health benefits opposed to soy lecithin.If it doesn't work then I'll get the soy. Will keep you posted.
