I've been a subscriber for years and this video just proves that your production quality and interactivity with your subscribers is top notch. You are entertaining, knowledgeable, and obviously skilled not just in cooking but at teaching us what we need to know and why. Examples: "Don't have thyme? Use rosemary. Use whatever herb that makes you happy." "Add a tablespoon of garlic... ok add two. It'll be mild because we will poach it (so don't worry, my friends)" "You must caramelize the onyo, this is EXTREMELY important!" "You must cut the onions the right way or the texture will be yuck" And all the while, I'm smiling because at this point I can fairly easily say out loud what you're about to say at the same time you do because I've seen most of your videos. Jack, we're gonna need a blooper reel real soon.

Ok this is definitely on my todo list today instead of French onion soup. I got a 25lb sack of onions on sale for $4.25 yesterday and I already have the shallots and leeks and garlic! This is so obvious it's crazy I never thought of it before! I've made cream of roasted garlic soup many times but never thought of doing just onion. I do make a 7 onion soup quite often, but never cream of onion. I will make a variant at my restaurant soon. Thanks Chef!

I've learned a lot of things from Chef J-P, but how to cook onions has to be the most important. Now I start off with more onions and cook them down until they look like about one-third of the amount I started with. It makes a huge difference in the flavor of my chili, enchilada sauce, spaghetti sauce, etc. and of course soups.

Chef, you are the best! You inspire me to cook meals I've never thought that I could possibly do. And...you make me smile and reinforce the fact that preparing meals can be fun. Since I retired in August, I have spent over $2,000 on new cookware and kitchen instruments. But that's okay. I don't eat out anymore. It's an investment into making my own meals well and enjoying what I make. My wife likes it too and continues to egg me on, no pun intended, To keep cooking. Thank you very much! PS-Making this soup is probably a good way to heat the house in January...if you know what I mean. 😉

Thanks! Excellent video as always, Chef! Pureed French Onion Soup is a luxury very few have experienced. My local French restaurant makes a very similar version called "Mountain Style French Onion Soup" they developed when in France, and the Chef gave me the recipe. The main differences are no potatoes (in France, they thickened it with one or two raw egg yolks, which they discontinued after moving here), they only use one onion variety (I like your approach better), and instead of incorporating liquor into the cooking process, they add a very, very small dash of Jack Daniels either at the end or to each bowl before serving (not sure which). Oddly, in making it myself, I have never seen the need for a thickener. Reduction does wonders. Thanks again.

Onions are number 1 in common antioxidants. Great video Chef. Your soups are the best and they do not bloat. In winter time, you probably should NOT be fasting, eating raw juices and uncooked foods. Soup is a great alternative. Even in Chinese medicine, they take medicine most often through broth, tea, warm decotctions..

25 years in Key Largo. Been gone 14 years. The first 15 years, I used to buy all this wonderful produce produced in Dade County. I lived 1/2 miles from Publix, and I would throw rocks at their produce!
