I didn't have gruyere so I substituted some mimolette that I had, but only at about 50% volume asked for because it's so potent. That is the only alteration and I am almost without words. It is so far afield from my usual cuisine that I wasn't sure if I liked it at the first bite. But by my third piece I declared it one of the best things I've every made myself. I wasn't prepared for onions(onyo) to be as sweet as fruit and custard to be as savory as meat. Deliciously surreal. Oh and your coulis and your crust were also a hit.

As an Englishman, I feel obliged (if not a little smug) to say, that only Cheddar from Cheddar George in Somerset is proper Cheddar. So even though he says “get an English Cheddar”, be warned, there are lots of so called Cheddar Cheeses out there, but only one true Cheddar George Cheese from the pre-historic caves in Somerset. Hello my frweinds 😂!!! Prep is essential! If you work in a kitchen, utilise your dish pig (pot washer) we all started there. Get em cutting your prep, I remember my 1st head chef (1996) made me peel a sack of beets, I had purple hands for over a week, lesson learned, wear gloves!! I asked him why didn't tell me to wear gloves, he said, it's the best way to make you learn, to Learn by your mistakes. God I've made many. I love my job! Being a chef is amazing. Another excellent video, informative and fun to watch. Chef Jean-Pierre has a real talent for making cooking fun and showing how easy it is to cook restaurant quality meals. This pie is delicious and excellent for dinner parties or a special occasion. We don't usually have the range of cheeses Jean-Pierre uses so for everyday family meals I use a single strong vintage Cheddar so the full flavour of the single cheese comes through. Another everyday favourite is with vintage Lancashire, red Leicester or Caerphilly all readily available in the UK. Keep up the good work.

I made your onyo bacon pie. Looks great. Will have for lunch tomorrow. I made it in a deep dish pie pan. Cut the recipe back one third. And it was just enough nothing left over. I think I will make a frittata with this recipe and add a couple more eggs.
