Made this and it was definitely the best I've had. The only things I can't stress enough are the importance of cooking the roux long enough with just enough heat to make it barley bubble.. Not even going to try to imitate chefs interpretation of the correct bubbling.....LOL... And also letting the cheese melt long enough unless you have an immersion blender. Years ago I attempted a similar recipe and it came out gritty. After watching this video I understood why. Thanks again chef your recipes are authentic, amazing, and truly attainable with modest cooking skills. P.s. chef, correct me if I'm wrong but the way to tell if your roux is almost ready, as you stir it, it will start to leave a white film on the bottom of the pan...

That is correct about the roux and also it should slightly turn into a "pale sandy fawn" color not enough to interfere with the "white" look we are looking for and final product! 😍

He IS A PROFESSIONAL CHEF. He just isn't working in restaurants any longer. The situation we are in changed his life for the better. He had restaurants, then a cooking school. I LOVE how in every video he emphasizes that cooking is a fun creative process! There's no reason to spend time cooking if you're not enjoying your time and cooking for yourself and your own tastes! That's why chef provides all of these ideas like including the mushroom, the goat cheese, the lobster, the truffle oil, the brie, but if you don't wanna do it, don't! So many chefs online act as though there's only one method to cook delicious food, but that couldn't be further from the truth. Much love from New York!

I love a ham, mushroom & cheese omelette - honestly it's divine! Saute the mushrooms in just a drizzle of Truffle Oil, it's a strong taste, so don't over do it. Add a little Champaign to the eggs and milk, the CO2 will help to add bubble to the eggs and make it feel lighter, plus the taste is awesome!! I've been playing around with cheeses from all over the world & currently I love Ossau-Iraty!! Although Comte is fantastic with Mushrooms!! I also prefer shallots or fresh chives, if I'm going to use a Allium in an omelette but I do love the taste of Spring Onions, especially in Chinese dishes!!! OMG the Chinese can cook!!!! A "diabolical mixture!" OMG I burst out laughing at that!!! God bless you!! I must add that I love a smoked ham & good thick bacon!!! That we can agree on! 🤣

This spring I was heartbroken with the implosion of the BA Test Kitchen. I felt like I had lost a home and now was wandering through KZbin on the prowl for a new home. The other day, KZbin brought Christmas in September. They introduced me to Chef JP. He is a cast of characters and needs no supporting members. For example in this episode, I swear heard Sgt Sholtz from Hogan's Heros as he was speaking about the lack of flavor from that 20-year-old tin of nutmeg. There is a whole bunch of personality and a little flair and I'm confident with four recipes down that I can successfully make each one. That's a great teacher. Chef JP raises the bar, our skills and entertains all in one! Thanks Boss!

I made this for Thanksgiving today. I didn't have gruyere cheese, so I substituted pecorino romano for half of the gruyere and used a little extra cheddar for the other half. I am afraid this side dish upstaged the main dish. It was mac and cheese, not turkey, everyone was reaching for when it was time for seconds. Chef Jean-Pierre I wish you a happy, healthy, and gratifying Thanksgiving. One of the things i am grateful for this year is your channel. I've been cooking for 40 years, but you have leveled me up. Oh look! White cheddar. In Canada, a lot of cheese ends up being pasteurized. But somehow in Quebec, they use unpasteurized, and they product cheddar without the colouring. So yummy.

Chef, I'm a member of a German Club. We cook something each Friday. Last Friday two ladies cook Lobster mac-cheese. It was very good. But! Very tight cheese. I love mine creamy. The next day I made them watch this Mac-cheese process. Yes! I sat them down and not let them talk and watch it. They're the type that likes to talk during shows. But I wouldn't have it. I really didn't make them, but they loved your way.

I like how he tells you about a little bit. Little bit of butter, 10 pieces, enough to put on twenty toasts. Little bit of milk is three huge soup portions of milk. I am sure this is delicious but I still do it without flour. Just everything else, mix of cream and milk. And lots of roasted onions and fresh pepper on top. Crunchy pieces of bacon are great as well.

My mom started teaching me to cook at the age of six scrambled eggs was my first dish. I’m now 46 years old. I feel like being able to cook in the kitchen is like therapy to me. It’s something I look forward to after a hard day both my parents had dishes that I loved growing up that I felt intimidated by cheese sauce was one of them. I didn’t do it for years and years intimidated because it seemed complicated in my mind, I think my wife for supporting my love of cooking and for eating and me learning to be more confident in my skills I have since for quite a few years now started making cheese sauce. It is a staple in my recipe book I have not bought more than two boxes of mac & cheese in the last 10 yearsand I finally was able to duplicate the cheese sauce that I remember my mom making without her recipe which I unfortunately lost since she passed 20 years ago and I will say chef that I am with you 100% black pepper is the way to go and cheese sauce there’s something about the flavour and the little speckles in the sauce that just hit home for me

I was YELLING at the screen - "Where's the NUTMEG!" and finally you brought it out! Perfect. Freshly grated cheese is best - that stuff in the bag is not nearly as nice. Oooh, lobster is a great idea. We don't do breadcrumbs - just the parm/reg - it gets crispy and lovely while the other cheese stays soft and creamy. Oooh baby. This is beautiful.

I fixed this for Thanksgiving and this was the only dish my cousin wanted to eat. He specifically waited until I got through fixing this before he would eat. And then he ate nearly half of the whole pan. I think he liked it. And it was amazing, even without the brie and gruyère.

Good afternoon Chef. I stumbled upon, and I am glad I did, your "KZbina" videos (I can say that because I am Italian). Not only do you present wonderful videos and recipes but you "hava" wonderful sense of humor. Your videos and recipes bring me back to my cooking school days in the early 1970s. I am methodically going through your great videos to bring back the basics of cooking. Yesterday I went to the local butcher and bought "soma" veal bones and I got a lot of beef bones from my local grocery store and tomorrow I am going to "teacha" my wife to to :make reala" beef stock for use in my soups and stews. Since I am retired (I was an FBI agent for 25 years) I will continue to watch your videos. Thank you for producing them, and to those who think they are the food police....ala fungo!! @@ChefJeanPierre it tasted a bit tangy maybe too much cheese so I fixed it by adding more Mac to it and seasoned it using oregano and it was fine next time I try mozzarella cheese 😅

Made this and I will never go back to my old gluey recipe again. I did not have cheddar cheese so used a combination of Gruyere, goat cheese, Parmesan Reggio, after that was melted I added my nutmeg and pepper. I finished it with blue cheese and truffle oil. Heavenly can’t wait to enjoy it with a glass of Chardonnay 🤤❤ Thanks JP for showing us your simple recipes ❤❤❤

This is almost identical to my Mac & cheese recipe. I’ve never added Bree, but I will next time. Also, I add a pinch of cayenne pepper. One time I was making this and used leftover garlic bread to make the bread crumbs…OMG…I will never use ordinary bread crumbs again. It was incredible.

Finally someone who doesn't stir in the liquid into the roux half a cup at a time, many people don't understand how the roux works the flour is coated in butter making it difficult to form lumps the whisk just helps mix something viscous into something thin.

Broke a rule but that what happens when you don't go by rules. Made pork chops in a non stick pan and used the oil and juices left in the pan with no visible fond. Proceeded to create a sauce with wine, balsamic, thyme, chicken sauce and flour/butter. Added just enough to make a small amount in the pan. It came out amazing. The techniques you teach are fundamentally great.

Slice shallots into thin strips then soak in water. Then dredge in flour and deep fry.

I am 68 and I have always wanted to know how to cook. And I love all the dishes you cook, also. And so, with your help and a bit of practice, I can now cook (well a little bit)! Thank you for these wonderful recipes and your instructions are priceless. My sister had lost her cooking motivation until I introduced her to you and your videos. Now, we enjoy discussing you and your techniques and recipes. She loves the way you explain in detail and associated comments. Also, I went to 4 stores yesterday to find White Truffle Oil! I know you said it was optional, but I had to know why you used it and what it was. 8 fl oz was $ 22.00 USD, btw.
