I have always seen beautiful dessert like this in cooking show eg MasterChef, and I have always been curious how should I eat it? Hello, agar is kind of gelatine. I think if you will ask in any big supermarket they will have it. You can replace it with other thing like gelan, etc but they are even more hard to find. Agar is quite common everywhere I thing.

Love all you recipes but it would be really helpful if you told us how many portions your listed ingredients provide. i like to use special recipes like yours for linch or dinner parties, usually for 6-10 people so need to adjust accordingly. can only do this if i know how many were covered by the video recipes. thanks.

alright, I know what you mean. But most of the time I don't know it either. You can make small pieces and get 10 portions or do a bigger dish and get 5...I cannot tell you that, you have to use your brain and think a little bit about what you do and how much you need. In general, I don't want people just to copy my recipes, that is not the goal of this channel.

I’m someone who has no problem adjusting recipes. Even my friends like Raymond Blanc set out ingredients for 4 and I adjust accordingly I love your east chocolate soil. I also love your scallops with grapefruit neuter blanc. I am preparing the scallops with grapefruit, rack of lamb with pommels purée and two other veg, followed by your panne cotta with raspberry sorbet, chocolate soil and palmers biscuits for dinner party Friday. What kind of double cream is that? Normally double cream is much thicker and not so liquidy. It looks more as simple heavy cream.
