CHICKEN CAFREAL
Preparation time 10-15 minutes
Cooking time 25-30 minutes
Serve 2-4
Ingredients
For Chicken Marination
4 no. whole Chicken thighs, चिकन
½ tsp Turmeric powder, हल्दी पाउडर
Salt to taste, नमक स्वादअनुसार
1 small Onion, chopped, प्याज
½ tsp Black peppercorn, crushed, कुटी हुई काली मिर्च
½ inch Ginger (peeled & finely chopped) अदरक
2-3 Garlic cloves, chopped, लहसुन
1 tsp Toddy vinegar, ताड़ी सिरका
3-4 tbsp Prepared Paste, तैयार किया हुआ पेस्ट
1-2 tbsp Olive oil, जतुन तेल
For Paste
⅓ cup Coriander leaves, धनिया पत्ता
¼ cup fresh Mint leaves, पुदीना पत्ता
5-6 Garlic cloves, लहसुन
½ inch Ginger, peeled, अदरक
Salt to taste, नमक स्वादअनुसार
2 tsp Toddy vinegar, ताड़ी सिरका
¼ tsp Sugar, चीनी
1 medium Onion, roughly sliced, प्याज
½ tsp Cumin seeds, जीरा
9-10 no. Black peppercorns, काली मिर्च के दाने
1 tsp Coriander seeds, धनिया के बीज
2-3 no. Green cardamom, हरी इलायची
2-3 no. Clove, लौंग
½ inch Cinnamon stick, दालचीनी
1 Green chili, broken into half, हरी मिर्च
Other Ingredients
2-3 tsp Oil for frying, तेल तलने के लिए
½ Onion, sliced, प्याज
½ Tomato, roughly dice, टमाटर
½ Capsicum, slice, शिमला मिर्च
For Garnish
Lemon wedge, नींबू की फांक
Coriander sprig, धनिया पत्ता
Process
For Chicken Marination
In a large bowl, add chicken thigh, turmeric powder, salt to taste, onion, crushed black peppercorns, ginger, garlic, toddy vinegar and marinate well. Keep it aside for 5-10 minutes.
Add prepared paste and mix it well. Rest it for 10-15 minutes.
Add olive oil and keep it aside for further use.
For Paste
In a bowl, add coriander leaves, mint leaves, garlic, ginger, toddy vinegar, salt to taste, sugar, onion, cumin seeds, black peppercorns, coriander seeds, green cardamom, clove, cinnamon stick and green chili.
Transfer it to a grinder jar and make smooth paste.
Keep it aside for further use.
For Chicken Cafreal
In a pan add oil, once it's hot, add marinated chicken, close the lid and cook it from both the sides until tender.
In the same pan, add onion, tomato, capsicum, left over marinade and stir fry it.
Transfer it to a serving dish, make a veggie bed and place chicken cafreal on the top.
Garnish it with lemon wedges and coriander sprig.
Serve hot with goan poi.

i tried this dish, it was awesome. basic details about marination and not letting the chicken get dry and still cooking it to perfection with timing was perfect, those were some inputs i personally didn't know. helped a lot 😁

Bruh, you nailed it again ! This is so perfect, i have had this many times in Goa and there is a restaurant called florentine in Goa which is very famous in entire Goa only for cafreal.. You made it quite similar 🙌🏻 You are phenomenal RB 🙌🏻

@chef I have one question, I moved from Haryana to Tamilnadu 8 years back. Here people use all three terms, Roti, Chapati and phulka differently. I grew up using all three terms as synonyms. Please tell me if they are the same or if they are different what is the difference. Or my friends in the South are just misled into thinking wrong.

In Central Mozambique, to be precise in Zambezi province, this dish is made with Desi Chicken and not broiler chicken. Also, here they don't use spicy chillies or strong spices. It's a treat to eat this when cooked on coals 🥰

@@sunilsgarage6042 I know he said. I was just sharing my personal experience with this dish. And if you follow Ranveer properly, you will understand that nothing is meaning less in cooking. Cooking on coal and cooking on gas stove is hugely different

@@kartikrdesai I know about coal ,stove all this things but argue about "there to here" mean you just think about India South to North and East to West in india if you see about dish take word about "lentil" we use for rice but you see cooking process is defrence in India South to north ..Ranveer was also saying about dish zambezi whatever I don't know also use forest birds to cook cafreal ...you hear then argue ..

Happy to see this recipe. My native is near to Goa at the border of Goa and Karnataka. My mom makes a similar dish and we love it.. I am definitely going to try this version as well using vinegar.

Pehle ke jamane mein Goa mein coriander nahi ugaya jata tha,isliye humare recipes mein coriander seeds hote hai lekin dhaniya patta nahi.lovely recipe 👌🏻👌🏻

Bhai! Hindi mein taarif karu ya angreji mein? Haalanki, aapne HINDI mein samjhaya hai toh, main hindi main hi kahunga. Moreover, it's our national language & i'm proud of it! Aapne jo yeh dish ki marination ki hai na, use pakane ki zarurat hi nahi hai( mere liye). Jitni khubsurati se aapne marinate kiya hai, main ise kacha kha sakta hoon. NAHI-NAHI! Main RAKSHASH nahi hoon lekin, aapke banane ka tarika hi kuchh aisa hai! MIND BLOWING! I'll definitely try this but, after going through your video 7/8 times. Maybe, 10 times. Truly speaking, MARVELOUS!

Hello ji I am sindhi and whenever we talk about sindhi food we talk about sindhi curry or dal pakwan but there is a lot more than these 2 dishes. I want you to make sindhi "buga chawal and sai bhaji" And " Sail phulko or bread and sail tiwan"
