When I was working in taj exotica in my village Benaulim in goa in the restaurant and chef rego was there for a big conference banquet. The goan dishes he prepared were chicken caferal pomfret curry and other goan dishes on the buffet. We had to refill all the dishes again and again as they were just amazing viva chef rego .I was honoured to meet you and all the best legend.

In ours we just put Crushed garlic Chillis Ground peppers Salt Lemon 1/2 orange juice & olive oil When you are bbq you brush the chicken with this marinate Since this chicken tend to be hard we boil it in a few minutes in the pressure cooker say 15 mins to tender then the above procedure, chilli and olive oil when heat the coal and bring a fume produces this aroma which is typical from Portuguese chicken

Agree, the first time we visited Goa (2000) almost all the restaurants served fantastic Goan food. The last time we went you could buy Russian food and all day English breakfasts. Authentic Goan food had to be sought out, all our favourite restaurants had changed. We were amazed and very sad, we haven't been since. 😢
