Ryan’s Pretty Panna Cotta Recipe Ingredients 1 Pack Strawberry Aeroplane Jelly Crystals 250 ml hot water 125ml cream 125ml strawberry flavoured milk 1 tsp vanilla essence ½ cup strawberries, halved ½ cup raspberries 1 tbsp water ¼ cup raspberry jam ¼ cup crushed biscuits (I used Malt O’ Milk) ¼ cup crushed macadamias A handful of mint leaves, or micro herbs Equipment 1 set of dome moulds, or straight edge glasses. Method STEP 1: In a bowl, add the Strawberry Aeroplane Jelly Crystals, then add 250ml hot water, stir until the crystals have dissolved, and let it cool for 15-20 minutes. STEP 2: Add cream, strawberry milk and vanilla essence to the jelly mixture, then stir to combine, and pour into dome moulds (or glasses). Place in the fridge until set (about 3 hours). STEP 3: To make the strawberry & raspberry reduction, add the strawberries, raspberries and water to a pan on low heat. After 2 minutes, add the raspberry jam, then stir with a wooden spoon and break the mixture down, continuing to stir until the mixture thickens, about 5 minutes. Remove from heat. STEP 4: To plate up the Pretty Panna Cotta, smatter the strawberry & raspberry reduction on a serving plate, then place the panna cotta on top. Lay down the crushed crumbs and macadamias on the side, and garnish with small mint leaves or micro herbs. STEP 5: Enjoy!

Ismat's Falooda Recipe Ingredients: Strawberry Aeroplane jelly, cubed 2 tsp rose water /Kerwa water 2 cups full cream milk 1 x 340g can evaporated milk 4 tsp caster sugar 60g raw unsalted cashew nuts 1 cup vermicelli noodles - mixed colours, cooked 2 tbsp basil seeds Rooafzah (rose water syrup) - to taste To garnish 1 scoop of vanilla ice cream per glass 2 tbsp pistachios, roughly chopped Dried rose petals, to decorate Method: 1. Make Aeroplane jelly as per packet instructions, adding 2 tsp of rose water to the mix. 2. Sweetened cashew milk: in a high-speed blender, blitz the milk, evaporated milk, sugar, and cashew nuts until you have a smooth, slightly thickened consistency. Chill in the fridge for 2 hours until the milk is cold and has thickened even more. 3. In a medium pot of boiling water, quickly cook the vermicelli until just cooked, drain and flash in cold water. Keep in fridge until ready to assemble. 4. Soak basil seeds in room temp water and allow them to bloom for 10-15min. 5. Assembly: in a tall glass, start building your falooda. I like to place some rooafzah at the base on the sides of the glass. Then the noodles, topped with the sweetened cashew milk, bloomed basil seeds, jelly, ice cream and pistachios and rose petals. ENJOY!

MARAMING SALAMAT(thank you very much)FROM THE PHILIPPINES🇵🇭! A lot of the things I get from foreigners trying the halo-halo is that they think the beans are too weird to be included in a dessert especially when a dessert has ice cream and shaved ice in it, but these people are very professional about it because probably they have tasted beans in other desserts as well so they are not weirded out or have a negative reaction about beans in a dessert and the halo-halo represents diversity in the ways of making the halo-halo because in very bizarre places in the philippines they also put corn and like even fish on halo-halo and it still tastes delicious despite having fish in it so I'm happy to see people like chefs being open-minded about the halo-halo having beans.
