Made this dish today, very flavorful and delicious. For the tomato sauce I roasted fresh tomatoes and garlic in the oven with olive oil to create a sauce/paste and added fresh tomatoes directly after the seasoning sauting step. Delicious served over CousCous. Thanks Chef!!

For this recipe i used American measuring spoons for the spice ingredients, skipped the jalapeño and only used a pinch of salt once during the cooking. Instead of rice i fully cooked sweet potatoes in the microwave, cut them in quarter bite sizes and added them to the bean stew. It turned out amazing.

This recipe looks delicious!! I'm going to try it. But for health purposes you should not use table salt because it is not healthy at all but use unrefined salt that has all the good minerals in it, either Redmond's, or Himalayan pink salt or Celtics salt but definitely not that white table salt! Other than that your foods look and taste delicious, especially the Kenyan potatoes and onions... yum 😋

Final product inakaa githeri. I didn't know of the kidney and cannellini varieties of beans. I only know of rose coco and yellow beans (my favorite). So it's great learning something new.

Chef Wainaina, why do you soak the rice? And kindly advise on why the water is less than the rice amount. I always thought is 1:2, rice:water, unless you are taking into account altitude, humidity, etc.

You soak/ rinse to remove surface starch, to minimize sticking and encourage fluffing. When you soak rise it absorbs water and hence reduction in cooking water ratio, Note, different rice(s) behave differently, so experiment and see what works for you.
