Fascinating! So easy to take for granted buying a box in the store- a lot of work goes into this product. Always learning something new and valuable from Chef Wang. Next time I fry meat in batter, I’ll try sweet potato starch.

Corn starch, potato starch and sweet potato starch have different molecular structure. These starches are good in it's own right and are used accordingly, depending on the recipes.
