Interesting...the meatloaf, with the egg on top, looks so much like Vietnamese's Chả Trứng Hấp. Didn't realize they're not the only ones using egg to top the meatloaf. As there is a worry with using domestic plastic wrap in high heat conditions (such steaming) I assume it should be ok to cover these dishes and steam them covered in aluminum foil wrap instead.

Asian cooking techniques are probably all related with each other.
I already wondered why everything was steamed. Being able to prepare everything in advance sure is convienent for the chef.

It's particularly convenient and quick for "field feast" (坝坝宴,田席), which often hosts hundreds of guests, requiring quick service for all. So, naturally steaming becomes a feasible way to meet that requirement.

This has been traditional foods for celebration just like Osechi-ryori. It's kind of rare to see an assortment of all colorful "field feast" dishes now as people have more choice of food for celebrations.

Another advantage for steaming is that you can keep the food on the steam and that keeps the food from spoiling, which is important when preparing so much food. Can't do that with other cooking techniques.
