Can you cook this in a Tagine instead of the pot? Would there be any changes needed to the amount of water?

yes, you would use less water. The cone shape of the tagine lid, allows for condensation to happen, which helps the food to stay moist. So use 1/2 the amount of water and add if necessary. Also note, that the amount of water will depend on the type of tagine you are using.

To keep it authentic, we are using the traditional tools that Dadas usually use in their cooking!

This knife is in every Moroccan kitchen and is super traditional. I've never seen any home chef, including my mother in law, use anything else. Inise one in the US when making Moroccan food. These small things keep the authenticity of the food. A chefs knife might seem convenient, but it's not what they learn to cook with and is not necessary. That cheap little knife does everything.
