This cookie is really delicious! Since it's buttercream, it tastes best when eaten cold, so keep it in the freezer and eat it!
And to make the same taste as me, it's better to use the same ingredients. If you use different ingredients, you need to adjust the amount of sugar or moisture.
Ingredients (14 pair cookies)
✔Whole wheat coffee sabre
70g unsalted butter
25g eggs
40g confectioners' sugar
120g cake flour or all purposed flour
60g whole wheat flour
2g instant coffee
✔Chestnut butter cream
110g chestnut paste (60% chestnut content)
100g unsalted butter
23g white chocolate
23g Heavy cream
3g Gold Rum
70g chestnut paste (for filling)
✔Bake in a preheated oven at 160 degrees for 15 minutes (based on Smeg, 3mm thick, so baking time may vary if thickness is different)
✔If you eat it the same day or the next day, you can refrigerate it. Anything longer than that can be kept frozen. Please enclose silica gel.
