I love that you added palm sugar (panocha). It has lower Glycemic Index than granulated brown sugar. It's more scrumptious.

The closet to adobo in Spain is the Escabeche, my mother used do cook it, with chicken o fish, adobo is another different thing in Spain.

@@flavorthoughts Depending of the zone of Spain it changes, it's more commonly made with fish as mackerel or chicken or smaller bits such as quail. Mackerel in Escabeche Here we go: 750 gr. medium mackerel 3 large garlic cloves 2 bay leaves 5 cloves 1 and a half teaspoons of sweet paprika 5-6 pink peppercorns 1/2 glass extra virgin 1/4 of a glass of white vinegar 1/4 of a glass of water sea salt flour for frying extra virgin olive oil for frying. Preparation: 1 We fry the mackerel. 2 In a deep frying pan, put the extra virgin, and when it is hot. We add the garlic, bay leaf and cloves. We aromatize the oil for a couple of minutes. 3 We add the peppercorns and vinegar. We let the acidity evaporate for a few minutes. After three or four minutes. 5 We add the paprika, salt and let it cook for another three minutes. 6 After that time, we put the mackerel in the pickle, and cook it for a minute on one side. 7 And another minute, on the other side and we remove from the heat. 8 And ready. We do this operation in two phases, to pickle all the fried fish. 9 We put it on two individual plates. We cover them with film, and let them cool in the refrigerator... this pickle is very concentrated. If we want it lighter, we add twice as much water and a little more vinegar and that's it. I hope it helps. This one recipe but there are a lot more, the best ones are in Spanish from Spain and I have to translate them, but it's okay I'll gladly do it.

This adobo version is just right! Congratulations!👏👏👍 Personally, though, I prefer adobo without the sugar. If I opt to somehow sweeten it, I just add pineapple juice into the marinade.😊

very creative. i suggest you add onions on top and let it steam for atleast 2minutes before you prepare it. it will change its flavor.

Yes for sure. I've used brown sugar as well several times. I'd use a little less, maybe around 30-40 grams in my recipe. Have fun trying the recipe 😊

With all the added steps in preparing your adobo it won't make a lot of difference from a normal adobo where you just put all the ingredients at once and just let it simmer until it dries out.

An Australian woman told me, you don't cook adobo with onion! I'm like "hello I'm Filipino, Tagalog na Tagalog!" I mean, I know how to cook my adobo.....Don't tell me how to cook it. Adobo is not complete w/o onions.....Anyway, I just ignore her. Every Fil. families /food businesses -restaurants, carinderias, street food etc. in the Philippines or Filipinos living overseas has their own version of adobo....

Hi, thanks for the question. This Adobo Recipe is rather well balanced between sweeness, acidity and saltiness. For sure you can add even more palm sugar if you like it more on the sweeter side 😊

Hi Lin, thanks for the question. Absolutely, you can use apple cider vinegar and it will turn out great! If you like you can reduce the amount of vinegar just slightly as apple cider vinegar is a bit more pungent that cane vinegar, but I think you're also fine by using the same amount 😊
