I’m a Filipino born and raised in the PI. This is one of the many version of cooking adobo whether pork or chicken. You did an outstanding job on this dish! I’d say you have my approval. Congratulations Marion! Thanks for featuring our dish.

I love that Marion is now highlighting dishes from all over Southeast Asia and not just Thai dishes. Try cooking Filipino dishes like sisig or caldereta next time which I think are also universally loved.

I love Adobo that has slightly reduced sauce that has been thickened through simmering, loads of garlic and chilies that add that appetizing kick. The sauce is just addictive on rice. 😊

I'm eating dinner (adobo) when I saw this on my recommendation. Love your adobo and everything I saw on your channel so far. Will follow your recipe next time I cook adobo-- my version is the lazy one where you throw everything in at once and let it gently simmer and cook. Thanks Marion!

This is such a easy, weekday dinner. And quick. I reduced the amount of apple cider vinegar and I added some sliced fresh jalapeños. I served it with steamed jasmine rice and steamed brocolli. My 6 year old cleaned her plate!

Adobo can be taken to another level when Filipino soy sauce & coconut vinegar is used. It gives it an authentic flavour. It’s kind of like using Chinese soy sauce in Japanese dishes, it’s delicious but not quite the same. But using regular soy & vinegar does make it more accessible to everyone though.

Greenwood&Reid I’ve tried both ways and I sometimes I want it with the regular vinegar then other times I do coconut vinegar. I love both ways lol

I would love to try it with the coconut vinegar! I'm pretty sure I can get that here in Thailand. But I think it would be hard to most of my audience in Australia and the USA :-(

Omg im drooling!! I actually just dump all mu ingredients and wait for it to cook, no fuss at all and it taste bomb everytime. I dont add onion and ginger in my adobo but this recipe looks reallu good. Ill try it

my filipino friend uses whole peppercorns, rice vinegar, soy sauce, bay leaf simmered slowly. I like the idea of marinating and browning chicken to get more flavor from chicken skin. I used small about of syrup (maple) as I had no other sugar on hand. Love the green onion garnish after slatering chicken with reduction sauce pour hot over adobo.

I’ve made this dish 3 times. I loved it. The 3 times that I marinated the chicken over night, it came out perfect because the ingredients absorbed and gave the chicken more flavor. The one time I was in a hurry and marinated for 20 mins. It just didn’t come out as good as overnight marinate.

I made this last night but I used boneless skinless chicken thighs. Did a little less vinegar, added some chicken broth and didn’t have chilis so I used chili paste. I also added a cup of coconut milk. Also garnished with chopped cilantro. My husband told me it’s the top 5 best dishes I’ve made and he wants it for his birthday dinner! Best compliment I’ve ever had on any meal I’ve ever made him! Thank you Marion! I save every one of your videos❤️

I"ve seen and tasted so many different ways of cooking Filipino adobo in my life and this is the first time I've seen regular adobo cooked with chili, interesting. Adobo in the visayan region of Philippines cooks it with coconut milk, they put those long green chili or small red chili, one of my fave version of adobo. I miss eating that. I cook my adobo with sesame oil, rice vinegar, lots of smashed unpeeled garlic that my kids fight about, & soysauce. When I want it with more sauce then I add onions and a bit of water .

Marion your dish looks great. Traditional Filipino Adobo does not need no marination. We simmer the cut up chicken with the mixture of loads of fresh garlic, soy, bay leaves, and crush peppercorns with some water. After simmering, then you pan fry it. Then you put it back in the pan add the cook sauce and add your vinegar. Cover the pan don’t flip, don’t mix, until the vinegar boils and cooks through. After that you can add brown sugar and add salt, if needed. The main purpose of boiling the vinegar is to avoid spoilage. Adobo is a dish that can be left out of the fridge for hours. When it cools down and place in the fridge a well cook Adobo [chicken or pork] should be good for 2 to 3 days without causing stomache after consumption. Most Filipino prefers Adobo because refrigeration is not needed.
