Glad you enjoyed it, Yes we have always spoilt the dog, they are all rescue animals, starving to death when they arrived with us. When I lost Pamela my dear wife in 2017 we has 8 dogs, now due to their ages, sadly I'm down to just three. Now approaching 80 I can't take on any more.

Hello Mr. Paul, I do hope you are feeling better every day! You are always in my thoughts and prayers. This morning I made the pastry for the Balti Pie. First time for me. It turned out well and is resting in the fridge. I then collected all the spices for the spice mix and made a double batch. It smells divine! I have just finished making the filling, and it’s cooling. It’s delicious! I can’t wait to put this pie together and bake it. I hope there is enough filling to put between the two pastry crusts. I’m terrible at sampling! Lol ❤️🙏🏻😊 Have a good evening! It’s only 1:35 pm here in Saskatchewan.

Thanks so much for the positive feedback. I've been looking through some old paperwork of when I joined my stepfather in his business, he had 5 pork butchers shops and manufactured in for the all of them. We mad three sizes of pork pies (with gas heated blockers) and every morning we made 600 dozen and they were usually sold out by 11am. Have good Pie week

Paul, have you ever come across Timpana pie, when I lived in Malta it was a regular feature when we went out of an evening as a snack, it’s basically a pasta pie Just wondered if you’d heard of it or possibly even had a recipe for it, as I enjoy all of your other recipes. Hi Rick, I have hears of it and it's very similar to Scotch Macaroni Pie we used to make in my bakery in the UK, we used the same pastry shell as we used for the normal Scotch Pie but filled it with a sort of macaroni cheese and sometimes a bolognaise mixture. I think it all started when the Scots used to put either baked beans or Macaroni in the top of a Scotch Pie and it evolved from there. I am a great pie lover but after one disastrous attempt at hot water crust I've never tried again. However you have made it look so easy, and I love to eat it, I will have another go. It might have been at my last and only attempt I didn't cool it, and used it while still warm, it was impossible to roll out, so maybe that was my mistake.

Hi Gemini I, Thanks fir your comment. By the way you can use an electric mixer for this pastry too. In the bakery we used to leave it overnight, when it's ready to use it should feel just like modelling clay (plasticine) not sticky and very easy to handle. I hope this helps. Hi there! Not sure which part of Spain you are in but I thought I would mention (as the last decade or so has seen so many of them spring up here) Most of the cities or large towns will have a Chinese grocery store and they tend to have a good selection of things such as garlic and ginger paste as well as other things to add variety to your pantry. I'm in Madrid so I'm quite spoilt for choice! But if you ever are here, I would suggest the area of Lavapies for a good selection of south Asian spices and rice etc. Also a lot of large Asian supermarkets in-between the zones of Cuatro Caminos and Tetuan. Keep up the good work!

An easy way of skinning tomatoes is to freeze them. As they thaw, the skins slide right off. I usually cover them with cold water to thaw.

Hi Mr Paul. Lovely looking pies. I heard (years back) that the Balti pie originated in Glasgow. No idea how true that is. I'd never had a chicken curry pie till I arrived in Dublin. Nowadays I make my own - similar to yours. I tend to adjust the spice depending on who's sharing with me Hope all's well? Dublin is stormy tonight - torrential rain, thunder lightning and flooding 😳

Good comeback. If this was filmed in real time, imagine the length of the video, I' m just wondering how your hot water pastry would go in a pie maker. Maybe now is the time to give it a try while I don't have an oven. I manage to cook bread in a frying pan but that wouldn't work for pastry.
