I like the clever fades from old photos to current. It’s sad that all those places are gone and replaced with what? Pretty much nothing. Communities existed back then, you could leave your door unlocked (most people had nowt worth nicking) kids played on the street…I didn’t think I’d be reminiscing watching a balti pie video this morning 😢

I’m Swedish so I’ve never had this pie before, but the photos made me a bit nostalgic for my own childhood as well. The days of dial-up internet, watching live news of the war in Afghanistan because the Swedish Public Service Broadcasting decided to show the evening news directly after the children’s programme, when a hot dog in a bun was a mere £1.50 and considered a good meal for a child, and the bread from a specific regional bakery that’s since shut down.

I’m from Appalachia in america (the north eastern Pennsylvania part, it spans multiple states and every part within is quite unique), and those photos of people and places fading to empty fields really hit home for me. Once coal moved out around the region, so did everyone else. The pie looks extra grand though; I’m going to try my hand at one tonight! 😂

I'm from Thorntree originally. I moved to Redcar a long time ago after living in France for a bit, so that makes me a fully proud Codhead now, lol! I work on Normanby Road, so pass through your old neck of the woods each day. Not all of us grow up to twoc things and cause a menace to society. Random fact, the Balti pie was invented by Walsall fc (contrary to wiki). Basically with Pukka they wanted to combine something english with the local community (balti curry being invented in birmingham) and the Balti Pie was born. Spare a thought when you drive past the ground on the M6.

Ha! I had completely forgotten about those "L" plates you had to have on a car or motorbike before you passed the test. I now remember wrapping one around a rear shock absorber on my 250 Royal Enfield (250cc was the max allowed until passing the test) which I rode like a fucking maniac all over the place. No logical reason for me to still be alive, tbh. The pie looks delicious. I miss being able to just buy a savory pie in the shops, 'cos here in the USA, savory pies are just not much of a thing except for some mass produced bullshit in the frozen food section. I do still make pork pies now and then, with hot water crust, as well as made-up-on-the-fly pies with shortcrust using whatever leftover meat and veg is lurking in the fridge. I'd make steak and kidney pies too, but Mrs 9thousandfeet would probably assassinate me in my sleep if I did. Not many Americans can handle offal of any kind, apparently. Pro pastry tip though, if I can be so bold. Dice the butter just a bit by hand first, then pop it in the freezer for half an hour or so before putting it in the processor with the flour etc. You want it a bit coarser than breadcrumbs before adding any liquid - more like flour with smallish ball bearings distributed throughout. Easy on the liquids too - it's not optimal to have the mix coming together so readily in the processor - it makes better textured pastry if you have to fuss a bit bringing it together on the board. If you have to use extra flour to stop it being even slightly sticky, that's way too much liquid. That's the way my dad taught me (though it was all hand-rubbing the fat into the flour back then), and that's way god would do it too, if there was one. 😎

I'm also in the US and it is a tragedy that there are not more savory pies! I live in the South and make a lot of biscuits, using methods similar to what you and Chef are doing. I freeze the fat and the grate it into the mixed dry ingredients using my food processor. Or, I pulse the fat into the dry ingredients until it looks like sand and put the whole lot into the freezer for at least 30 minutes, sometimes overnight. When ready to bake, you just barely stir in your biscuit liquid, fold a few times, pat out and bake. Fluffy, layery, tender middle, crispy outside beautiful biscuits.

Chef, thank you for the tip about using baking soda to facilitate browning of pastry. I have never run across this gem in all my decades of baking, so I consider it a fair trade for my faux toum recipe. 😂 In the US we are sorely lacking in affordable housing, affordable healthcare and savory pies. Therefore, I have 3 roommates, am nearly bankrupt from medical bills and don't have any individual pie tins/dishes. Would using a muffin tin and adjusting the baking time work? If so, I have 2 styles of muffin tins. One has deepish wells (7cm ?) and the other is somewhat shallow (4.5 - 5cm?). Which might be best for experimenting with the Balti pie? Is the lovely pastry looks too tender to be used as a hand pie/pasty vehicle for the filling? Thanks!

The pastry holds up really well. I think both of your tins would work very well. I've baked pies in metal muffin tins before and they came out fine. I've also made pastys and quiche with this pastry and it's solid so don't worry about it holding. Obviously just make sure the filling is not too wet and is cooled fully but I'm sure you know that already ❤

Only stumbled across your page tonight (well, this morning I should say 🥱😂) and I’m hooked! Your commentary is the bollocks in all the your videos that I’ve watched so far but even more so in this one with all the football references 👌🏻. My favourite memories are going to the Walsall matches with my Grandad, Dad and Uncle, I would have a Balti pie before every match but none looked as good as this 🤤. I’m definitely gonna be making this soon. Thanks for the inspiration and making me reminisce, mate. I can’t believe you haven’t got more subscribers! I hope they start flooding in.
