Thank you again Mr. PAUL, I made this last weekend, what a enjoyable outcome, I seem to be 99% OK making your hot water pastry usually the night before like you suggested, however not so successful with short crust type, thanks again for sharing so much of the method and what to look for makes for myself a newcomer to enjoyable cooking/baking 😉

Hi MR.PAUL, You've given me the confidence after making your pork pies twice now to attempt making this wonderful Christmas season celebration pipe, to have this pie for a Christmas family coming round Boxing day, when would you suggest I make it, and you mentioned plumping up the canaries in hot water, is that boiling or sort of washing up temperature, sorry to keep bombarding you with questions, but I'm relatively new to cooking and enjoy it emencely and the achievement when family enjoy the meal.

Hi Mike, The cranberries I used were the sweetened, dried variety, you can also use a good cranberry sauce in a layer between the meat layers instead. I used water just off the boil. I personally would make it on Dec, 24th for eating on Boxing day. I hope this helps.

The beginning of the video went a bit wayward with the sound being near inaudible however the main video is great as usual and very interesting in regards to deciding quantity of required pastry and filling, I have not seen that method before. Also, though we can buy pre-made ready to roast turkey breast/thigh roasts but buying portions of breast or thigh isn’t however, duck breast is readily available and I think could work very well with this recipe. Thanks again. Btw, most people in Australia don’t have whole turkey any time of the year though some do, we tried it once, I wasn’t a fan of the massive tendons and cartilage, I do regularly eat the above roasts i mentioned but we much prefer the humble roast Chook/chicken and roast pork at most Christmas dinners, sometimes lamb. I wish yourself and everyone as wonderful Christmas and prosperous coming year that is possible in such as strange world we find ourselves in. Thank you for all the videos and effort you have put into this channel. Best regards from Australia 🐨

I always wondered why you can’t put gelatine directly into your heated liquid, rather than dissolving them in cold water first?

Hi Kelvin, I have 5 rescue dogs and when I'm filming they're usually out on the terrace if it's not raining, or in the lounge and as I shoot all my videos on my smartphone it's not possible to disturb the camera once it's all set up.
