Unlike Comorian pilaou which has become very popular, Comorian biryani remains unknown to many people because it is prepared occasionally.
INGRÉDIENTS
1.5 kg basmati rice
1 cup fried onions
2 kg chicken thighs (each thigh
cut in 2)
a handful of chopped mint and parsley
3 tbsp garlic and ginger
500ml sour milk or plain yogurt
1 pinch of saffron + 3 tbsp hot water
4 tbsp for cooking
salt
Food coloring of your choice
5 fresh tomatoe
200 ml/g tomato puree
For the spices

1 tbsp cardamom
1 tsp pepper
4 star anise (optional)
3 tbsp green cumin (tilanis)
3 tbsp coriander (nkoba in Comorian)
2 peppers (optional)
1 nutmeg
2 cinnamon sticks
