I love enchiladas verdes! I make them all the time in fall/winter using a salsa verde recipe from The Homesick Texan, but instead of chicken or carnitas, I make a spinach and oaxaca cheese filling. That’s what I grew up eating at a now long gone restaurant called Santa Fe that made new mex/ mex food. I like to serve it with refried black beans. Such a comforting dish!

That sounds delicious! Whenever I make them, I also always add a little bit of the sauce to the interior which stays nice and juicy- what does everyone think about that? Just enough that it kind of mixes in with the cheese and meat.

Salsa verde is my favorite sauce for for chips, tacos , and burritos. I know this is weird but I’ve never eaten enchiladas . Both my husband & our daughter love them. Maybe I’ll surprise them and make your recipe for dinner. Sending good thoughts and prayers your way.🙏🏻❤

Enchiladas are plain burriots. If you like burritos try making wet burritos! U make a burito and like the enchilada you dress it with the enchilada sauce. If you want a chimichanga! Fry the burrito first over a flat pan, get the tortilla crisp. then pour your sauce Enchiladas are really just the sauce

I always use my hand mixer when I make shredded chicken in the instant pot. Saves you A LOT of work.

Used to work at a deli where later on they added chipotle style bar where customers can choose whatever they want and basically crema was semi made in house by combining basic sour cream and milk and this was done by a Hispanic mom who told me the secret! You're welcome.
