I just love your cooking. Your recipies are absolutely deliscious. Each and every one of them. They take me all the way back top the Kyklades, Thessaloniki, Edessa and the mountains. They are Like a warm hug as ist the way you are cooling - with so much Love and passion. ❤.

I just want to tell you about a Greek soup I have been making for 15 years. It's about 1-2 cups chickpeas, soaked all night. rinsed. Then you cook them for one hour with up to a full cup of excellent olive oil, one onion and two bay leaves. After that they go in a ceramic uncovered dish and you throw them in the oven at about 325 for up to 3 hours. You want those onions very caramelized on top! This is absolutely fantastic- people are shocked by it! You gotta try it:-). And of course add water as necessary..

This is one to put in my recipe book, yum, I switched to coco aminos the last few months and find food cooked with it easier for me to digest, I do a version of spicy rice with lots of spices and no protein so meat is cooked separately,

Chaufa! Another good one that I tried years ago, at a Peruvian restaurant in Portland, OR was "arroz con pato" (rice with duck). The rice, they told me, was cooked with beer (which I don't like). 20 yrs later, I'm still dreaming of it. When I went to Perú, it didn’t look the same--tons of cilantro (tastes like soap to me) or parsley. Guess I'll have to ask that chef for his

I make this quite often and did not know it was called Peruvian Fried Rice

There many versions of fried rice , but this is the Peruvian one, should you ever go to a Peruvian restaurant order for arroz chaufa, that's the name in Spanish.

Hi, Dimitra! This looks great! Could I sub out shrimp for the chicken? I will definitely make this with chicken; however, we eat quite a bit of chicken, so I wondered about swapping in shrimp as a change. What do you think?

I've noticed that in a few of your recipes you emphasise that there's no soy sauce. Is there a reason for this? PS: love your channel.

Hi Dimitra❤ Love all your recipes. I have a request, my family loves dulce de Leche and suggested that I do it with a krinkle cake but I have no idea if I add it to the custard instead of using condensed milk or just pour the can of it over the finished phyllo. Need help!
