This recipe brings back childhood dinner memories. Especially when you said “serve with mashed potatoes”. I am 1 of six children. My mom had to make dinner for six hungry kids and a husband so every meal had some sort of potato. This meal was served to use as it was economical and easy on the budget. Just made a crockpot of chicken veggie soup this evening. Will let it cook on low thru the night. Husband and son will start eating it tomorrow for lunch. Noodles will go in 10 minutes before serving. Never made chicken veggie noodle soup. But my husband asked me to do it. Done! Lol Thanks for sharing.

Girl, you need an Instantpot!! Your chicken will be done in 12-15 mins. ☺️ AND.. You can throw those noodles in the Instantpot (with the chicken) after you have shredded the chicken, ofcourse, for about 4 mins. 💕I love watching you cook.

Thighs and dark meat are too greasy, and not as healthy, for my taste. I only eat breast meat.
