This creamy chicken pot pie soup filled with roasted vegetables and chicken, served with herb-flecked puff-pastry crackers might be the perfect dynamic duo and ultimate comfort food.
Full Recipe: preppykitchen....
Chicken pot pie is SO good, but the leftovers aren’t quite as delicious, because the crunchy topping goes soggy the next day. This recipe solves that problem by delivering a dynamic duo-a creamy soup filled with roasted vegetables and chicken, and herb-flecked puff-pastry crackers that stay crunchy all week long.

I offered to recreate this recipe from my favorite Preppy chef . The guy that I am dating kind of hijacked my Super Bowl gathering suggestion. As it stands, I am bringing nothing to the gathering. I was excited about preparing this for the guy. Now, I am genuinely grateful that he has revealed a little more about himself. And I will save money, time and energy.

I've been watching your channel for a while now and can I say I love that you don't edit out mistakes... it makes you so much more relatable! Flour clouds, accidentally dumping the yolks in the whites, we've all been there and you make me that even if I screw up it'll be okay and I don't have to start over. Thank you so much for what you do

I know this is an old comment, but I have to agree! He is so real and transparent. I am VERY hard on myself when it comes to cooking, to the point that I sometimes cry if a dish doesn't come out perfect. I feel like people will judge me! But watching John, an amazing chef, making little mistakes, helps me to go easy on myself. It's all a learning process!

This recipe intrigued me enough to actually try it. Tentatively, bcuz I'm allergic to poultry, so I substituted with beef/beef broth...but essentially kept it the same. I've never been able to get a beef stew to come out brilliantly. This hit it out of the park! Thank you! My husband LOVES it! Enough that he carefully packed the leftovers away for later, like he didn't ask me to do, he actually did it himself? And he HATES leftovers?! Thank you thank you THANK YOU!!!

best way I know to dice onions quick and safe is the following: cut the onion in half from crown to root. Then lay cut side down, trim off the crown. Placed your hand on top of the onion and slice 2-4 times parallel to counter from crown to root (stopping) short of cutting all the way through. make a couple of slices across the top curve solid piece of onion (where your hand was previously). Now just cut the thickness of dice you want. Done and easier to control the onion. You'll end up with about 1/2" of onion near the root you can just throw away. Remember do NOT cut all the way through when making the parallel slices. You want the onion still intact when you go do cut the diced portion.

That's exactly how I chop onion too. I've tried the other way that all TV and internet chefs say to chop the onion and honestly find it a lot hard to keep the onion intact while you chop. The trick to doing it the way John does in the video to get uniform pieces is to angle the knife in slightly on the first cut on the end then as you move up the onion to straighten to a 90 degree cut to the cutting board. Super easy and the onion stays intact the entire time, even when you get to the end.

I made the crackers just now with jelly roll pans....doesn't work very well. I think air is kept from circulating sufficiently (around the center ones especially). Second tray (jelly roll pan again) I docked the crackers with a fork. The lamination did puff a bit but I'm very happy with them! Thanks John! My book club tonight will love these! ❤

Adding the bacon and roasting the root vegetables enriched the flavor. It is a bland soup, so I upped the pepper and added a wee bit of Tabasco. Having no puff-pastry in my freezer, I made herb-flecked biscuits using he outstanding Southern Biscuit Mix that has Crisco bits already in it. I keep this in my freezer for just such occasions. Amazon.com sells it.

I cut onions like you did if I’m using a smaller portion. To dice a whole onion, I learned to cut the onion lengthwise, leaving the root end as you trim off the unusable parts. Then cut down angling toward the center almost all the way to the root end. This way the root end is holding allot of thin onion-length slices. Then, holding the root end, chop from the stem end to the root end; very little chance of damaging fingers.
