Chicken Salad Recipe
Ingredients:
4 Cups Cooked Chicken (chopped or shredded)
1 Cup Hard Boiled Eggs (chopped)
1 Cup Sweet Onions (diced)
1 Cup Celery (finely diced)
1 Cup Sweet Pickle Relish
2/3 Cups Mayonnaise
1 Tsp. Parsley
1/4 Tsp. Salt
1 Tsp. Black Pepper

Love this recipe. Similar to how I've made it for a while. Once I forgot to buy the mayonnaise, ended up using softened jalapeno cream cheese instead. Turned out delicious, and became my "go to" way to make it. Works great for tuna salad, too.

I love "salads" Tuna salad, egg salad and chicken salad. Awesome recipe. I have always made chicken salad from leftover chicken. Depending on how the chicken was originally cooked just adds to the flavor. No 2 chicken salads may be the same, but it's always delicious.

I always just boil white and dark boneless skinless chicken with flavorings....then chop and go. Last time I made it I chopped it too fine and I was not happy....until I ate it. It was so good! Looks delicious....will have to check it out!

How did you guys know I was going to make chicken salad? But that was hours ago and we have already eaten it. The ingredients were the same anyway except for the pickle relish. I did need a little mustard/mayo spread on the rye bread as it was a little dry and I couldn't wait to toast it either!! Will have to try it with relish next time.
