Made this tonight, thanks for sharing Chef! I found a easy and fast way (on youtube) to "peel" the pearl onion....cut the root side off each pearl. The put them in a pot of boiling water for 2 minutes. Take them out the pot and let cool for like 2 minutes. Then get a bowl to catch the pearls..hold the onion at the uncut end and squeeze! And out pops the onion (from the root area u cut off)!!! Super easy.

Just made this today for family. Everybody loved it it was outstanding. The skin was absolutely crisp the chicken was moist and succulent potatoes and pearl onions that soak for a while in the olive oil salt pepper & Thyme was excellent. Under 25 bucks for everything including fresh chicken from my local butcher and fresh thyme fed a total of 6 people. I'll be making this again

Chicken Vesuvio is a “Chicago classic.” It came from the Italian Americans that settled in one of Chicagos first Little Italy neighborhoods., Taylor Street to be a ax to. Typically from Naples. It’s chicken on the bone seared in olive oil, garlic, and oregano then add to the oven with white wine and more (just another good pinch) of oregano. Fresh or frozen are added at the end. The top of he chicken skin is crispy and it’s fall off the bone underneath with all those juices. Get some crusty bread and an old school salad with oil and red wine vinegar. It’s actually got a Wikipedia page sharing the history. Pasquale.......is looks delicious.

I lived in Italy in the north near aviano American air base as a kid as my dad was in the service. I love Italian cooking and you have no idea how much I love your channel. I bought the chicken and the patatos and onions I forgot fresh peas. But I will add carrots and mushrooms so tomorrow I will go buy peas if I make enough tips at work and I will cook this as soon as I can. You have taken my Italian cooking to another level. I even talk out loud when I cook with your accent *cook in da pataydas*

I enjoyed making this amazing dish last night for a special dinner and all my guests loved it. To jazz it up a bit, I tossed in a handful of lightly sauteed pinenuts and used fresh Italian parsley for garnish. Totally delicious meal and a beautiful presentation. Great recipe, made it once, did not like the peas or small onions. , so I improvised, I used a good sweet onion sliced thick, I subbed just some capers for the peas and added some sliced red peppers.

Chef Pasquale, PLEEEEEEEASE open a restaurant or have a large (100 people if that's considered 'large') paid admission and for the meal get together for your subscribers and fans every quarter where either you cook or supervise the cooking for those of us that salivate over your recipes and cooking techniques on every video can enjoy your amazing cooking firsthand! Because after experiencing that, I'd THEN be ready and free to finally die and go to heaven with a heavenly meal already in my stomach from Chef Pasquale as there wouldn't be any need to be here anymore! Looks good! I made it and added porcini mushrooms also I dipped the chicken in seasoned flour before frying. I also added chicken broth and butter towards the end. It made a nice sauce. 😊

Nice meal. I would add some chopped parsley or cilantro. Also, maybe some rosemary or oregano in with the thyme.

I am and was thinking the same thing. I thought it was invented by Italian American in Chicago. Maybe he got it from someone from the old country. I make this atleast 1 a.month for the past 19 years! Delicious peasant food. 😁
