Chinese takeaway Chicken and mushroom. This is how to make the classic takeaway dish that you get from the Chinese, chicken with mushrooms. if I ever order a take out it normally has chicken and mushroom with egg fried rice and vegetable spring rolls. I decided that I should make this at home. So here it is, homemade Chinese takeaway stir fry chicken with mushrooms.

This is the closest recipe to the Chinese takeaway i buy. I tried alot from youtube but this is the best one. Thank you!!!

For a more authentic takeaway flavor, I'd recommend starting the final cook with only the bottoms of the spring onions and adding fresh, chopped garlic. Then, after 30 seconds of cooking the aromatics, stir fry the onion and carrot, and then add the chicken and mushrooms. Sherry is a better substitute for Shoaxing wine (which is what they're using at the restaurant) than white wine is. I'd also recommend pre-mixing all of your sauce ingredients in one bowl--dry and wet ingredients alike, and subbing chicken or veg stock for the water--except leave out the corn flour. I'd add a bit of sugar to this recipe for takeaway-style sauce and a drop of some kind of oil (sesame is good, but even just a drop of vegetable oil in the sauce helps). After adding the sauce, thicken with a corn flour (corn starch) "slurry," which is just a premixed bowl of corn flour and water; the oil added to the sauce does something magical with the slurry. Lastly, I would add the top half of the spring onion once the dish has left the wok, letting the high heat of the cooked food mildly cook the green part of the onion. This will add another layer of flavor that will make it taste "more takeaway." Looks delicious. Nice video.

Nice video, looks very tasty! I would question why you use 300ml of cooking oil to pre cook the mushrooms and chicken. Shallow frying would have been fine in my opinion and cheaper. Also I have a pet hate when people use metal slotted spoons etc on non stick pans.

Have you tried fish sauce or hoisin sauce in your Chinese food recipes? They add so much flavour to recipes like this one. I love chicken and mushrooms so tasty and here in USA I only have seen beef on the menu. Is that the way take away is sent home now in a plastic container?

No need for all that oil mate, you could simply part boil the chicken in the cornflour to seal it then fry it off in a tbs of oil ........ the mix the chicken goes in is to just smoothen the texture ‘velviting’
