SUCH a hot weekend in England this week. We've been quite lucky to not get hit by one of those crazy heat waves that happen every year now. But yes, I cooked this for a birthday lunch a couple weeks ago and the flavor of this broth is so nostalgic. I remember my mom making this exact broth. Let's see, if I were to make it for me: 1. Sub wheat noodles for soba noodles 2. Miso for the 'chicken' powder 3. Urm, I'm going to keep the soy sauce for this one...so no change there :) 4. Sesame oil...probably toast some sesame seeds and crush it a bit, but urm, I still haven't found a great sub for toasted sesame oil. It is true that it gives a different taste than tahini. But now that I'm quite sensitive to oils all I could taste was the sesame oil and I really did not love that at all. (I'm working on something for this....it's a lil experimental so if it becomes something, I'm obviously going to show you all :) 5. OBVIOUSLY PLENTY MORE VEGETABLES

@@EastMeetsKitchen You're welcome! Also, for the sesame oil, I have found even a small amount overpowers a dish, so I use literally 2-3 drops for a quart of soup or noodle stew, and that's enough.

Ughhhhhhhh😢 I didn't even want to walk around when it was 90F...I honestly can't imagine. Like as someone that likes to roam around markets and streets - as I'm sure you did when you were here it just wouldn't be possible. It is highly worrisome. And wondering what kind of world younger people will grow up in. So, I very much see why some people advocate quite drastic measures (not drastic really since here we all are now) but I wonder when/if people will someday get to take back the environment... which probably requires some sacrifice but I want to stay hopeful.
