Before mid autumn festival, I created this pastry for my family and friends who have asked for something sweet without adding sugar. I was given a big box of red dates by a dear friend and this idea came to my mind to make this red date pastry without the need of adding additional sugar. The red date itself brought natural sweetness to this pastry.
RECIPE
RED DATE FILLINGS
700g Water
180g Vegetable Oil
500g Red Dates
100g Fried Glutinous Rice Flour (KAO FEN)
WATER DOUGH
140g Medium Protein Flour or All Purpose Flour
35g Ghee
65g Water
OIL DOUGH
100g Low Protein Flour (you can also use All Purpose Flour)
55g Ghee
