My Dad was Chinese, our family is from Hong Kong but he came to the states when he was about 6 and got bullied really bad growing up. Because of this he never felt comfortable teaching me about our culture. After he passed suddenly when I was 17 I’ve been studying all the time to get closer to my heritage. I appreciate you sharing this recipe so I can better make dumplings from scratch for my family. I know my dad would’ve liked to see me make them too

With living in a smaller town, we have little options for good quality Chinese food. We adopted our daughter from China and I wanted to provide comforting dishes for her that she has some vague memory of (she loves noodles). It also allows me to learn how to make the foods that I experienced while there. Souped Up Recipes is among my top channels that I subscribe to for learning how to cook Chinese food. It’s embarrassing to admit but I’m Chinese and the daughter of a wonderful Chinese Mom who is an amazing cook! However I moved away after college and never learned to cook all the traditional Chinese, specifically HK, dishes I loved as a child. So when I found you channel, I was super thrilled to be able to replicate some of my Mom’s dishes. Your videos are professional yet easy to follow. You’re super happy which is a big deal for me b/c I love enthusiastic and positive people like myself. 😄 So in a way, it’s almost like learning to cook with a friend. The results is what matters so that’s why I subscribed. You rock! P.S. My kids became fascinated with Chinese cuisine after taking part in a 3-week intensive Chinese language course. One of the favorite times of the course was learning how to make dumplings. For me the reason I subscribed is because of the charsiu recipe,as a Cantonese who eats alot of charsiu I want to try to make it at home and since my family don’t make Charsiu I look for an easy and simple recipe,I see the simple ingredient and I decided to try it and it was DELICIOUS then I started to looking into your other recipe and try some of them like the dumpling recipe, the chong you bang mian recipe, lo mein recipe, popcorn chicken recipe and many more and all of them works perfectly, so I decided to subscribe.

I actually tried to make dumplings for the first time last week using one of your recipes and although they weren’t perfect they were super tasty! Honestly it was you! I like the way you give detailed facts, and make sure the food is the focus. You explain why certain ingredients are used, and why not to use others, but always seem kind and helpful as you do it. Plus you clearly love to cook and are proud of the work, so it’s great to watch you succeed and grow. As for the actual video that made me subscribe, it was the one that went through all the basics you need in your cupboard (Must have Chinese ingredients video). Not only did you give a full set of key ingredients AND explain the differences, you even showed where to look on labels and where to buy the ingredients themselves. That was tremendous.

Totally sticked with u because of the vast amount of delicious Chinese recipes you were whipping up. I was searching for authentic chinese recipes - it's my favorite type of food. I've seen lots of videos but when I came across Souped Up Recipes I was immediately drawn to the detail you put into how you make the dishes, and I'm always so appreciative of the fact that you use science to explain things that I would've taken for granted so it's easier to follow the rules. I subscribed to your channel because my husband’s father was Chinese and I had no knowledge on where to begin learning to cook anything that he’d like. I’m an audiovisual learner so I needed something beyond plain recipes in a cookbook. I found you in a random KZbin search. I loooooove the step by step instructions, full recipe and links to order those hard to find ingredients and gadgets. Anyone of any age can follow your tutorials and that is awesome. I used to teach school and I appreciate the hard work you put in with producing these videos. I wish I was there to sample all those delicious dishes! Listing the ingredients on the screen is also another big help. You’ve given me the courage I needed to cook authentic foods for my husband without fear of embarrassing myself or him should we host a dinner. He says everything is yummy for his tummy!

I had been looking for a recipe for baozi, steamed pork buns, and found your recipe a few years ago. I have found your channel through a comment on a Reddit post and I have fallen in love with your content. Today I cooked these dumplings and they are absolutely delicious. I've been in Tianjin for 3 weeks as a 16 year old and fell in love with Chinese dumplings and cuisine in general. Ever since I've tried so many recipes but never found one that was as good as this. The dough was perfect, I tried the little rolling wood for the first time (made it myself yesterday specifically for this occasion) and was surprised by how well it worked! The one thin I still have to get good in is the folding technique. I've folded Bánh Bao and have gotten pretty good at it but it's not the same as with this dough. So I've used the Gyoza technique after failing the one you showed in the video... but I will surely learn it in time. Thank you so much for all the wonderful content you put on KZbin. For people who love Chinese cuisine and want to cook authentic food this is absolutely perfect. All the best wishes from Germany! As soon as I got enough money on the side I'll buy the Wok! ;)

I clicked because I was looking for more authentic Chinese recipes, but subscribed because not only were your recipes good, they were thorough. I like how sometimes you give the history or background of a dish, and your videos are always very clear and measured so there's no confusion about when something happened. And I like that you explain why something needs to be done a certain way (I certainly would never have considered the importance of cold vs boiling water in my dough until it was too late). And I love the way you describe foods too, they make me so excited to try them!

Living in Hong Kong for 13 years, I got to try all kinds of yummy Chinese food - then I moved back to the states. Can't find authentic Chinese food anyplace, here they think Chinese food is deep fried balls of dough. I missed the food so much - your channel helps me understand why you do things in the order that you do and why. I have gotten much better in my cooking thanks to you, I can now make some of the dishes and the flavors that I remember . Thank you :)

Two years ago, when I was 11, I was looking for a recipe for pork buns. I saw your recipe and clicked. It was the first Chinese dish I made. Time passed by, cooking (especially Chinese cuisine) became my main hobby. Then I came across with you again and immediately recognized you and noticed how quality your recipes are. I've been following you for 1 year now. You introduced me to Chinese cuisine and helped me deep dive. Also, I became interested in traditional Chinese medicine, Chinese calligraphy, Chinese history, Chinese brush paint and Classical Chinese. You changed my point of view. During the pandemic, I had to start cooking more for my family. They prefer eating Chinese food, so I took it upon myself to find more Chinese dishes. I came across your channel and decided to give your recipes a try. I've probably cooked at least 10 of your recipes and every single one of them always comes out amazing and my family absolutely loves it! I appreciate the little tips along with the reasoning that you provide that make a big difference to the final dish. One of the big lessons I've learned from your videos was that cooking takes patience, and a little impatience can make or break a dish. Every time I follow recipes from KZbin, they come out well but something seems to be lacking and I cannot put my finger on it. However, every recipe that I've followed from you comes out extremely flavourful and I add it into my recipe book for easy reference. I subscribed for a few reasons. Firstly I think you seem like a lovely person and this shines through on your videos, making them super enjoyable to watch. Secondly, I think that the techniques you use and the recipes you do seem authentic, like it might taste like food I’d be able to eat in China. I’ve learned so much cool stuff, like the way you always stir dumpling fillings in one direction to develop the myoglobin (it makes the texture so much better), using half denatured dough and half yeasted dough, adding garlic ginger water to dumplings to make them juicier, velveting meat etc. Thirdly, your explanations and breakdown of what you are doing and why is really clear which means I can actually do it myself at home and all the recipes seem approachable and easy. Thanks so much! I really do love your channel!

The authenticity of the recipes you propose. We can really see all the hard work you put in the recipes. I love how you explain why we need to do this or not do that. You don't just tell us what to do, you make us understand what happens :) I also love how you give us some context and history about the dish you are making. As a third generation of Chinese people in Europe, you help me learn a bit more of my culture, and of course, the taste always ends up amazing!!

Normally, when deciding to subscribe, I ask myself whether I would be sad missing recipes which was very true for your channel. However, when describing this more intellectual and less emotional, there were many reasons to subscribe: I love your selection of recipes covered which is a good mix between easy/quick and complicated/elaborate. You mention many tips and tricks. When trying out the first one or two recipes, the results were flawless (at least to my limited western standards). I like how you include the actual name of the dish in Chinese and that you make a lot of effort to research your dish, recipe, and ingredients. Moreover, you present the recipes in a very approachable way which invites me to try them out.

So the reason(s) why I subscribed to your channel is because: 1. I first found you through a dumpling video (it was one about maybe 2 years back?). I have a sister that is obsessed with dumplings. I didn't have all the ingredients on hand but made do with what I had in the fridge. My sister really loved the dumplings I made following your recipe (replacing with what I had on hand). 2. I always like watching cooking videos to learn specific techniques, etc. which I learned a lot from watching your videos, especially since your steps and directions are always very detailed (and if I fail in the kitchen, I know it's because I didn't pay enough attention to you).

I was looking for authentic Chinese recipes with English descriptions, and your channel was suggested. And I was hooked ever since, stocked my pantry with the most common ingredients, and have made loads of dumplings, stir-fries, and soups.

I started watching your channel at the beginning of the COVID pandemic. We were locked down in the Bronx with restaurants closed and no means to get Chinese food delivered. If we wanted Chinese food, I had to make it myself. I started with something easy, like chicken and broccoli, and moved up to dumplings. My family was thrilled, I learned how to cook a new cuisine courtesy of your very detailed instructions, and I have continued to use your methods even though we can now get food delivered. There is nothing better than homemade and I am so proud that I learned to cook dishes that I was too afraid or frankly too lazy to do before. Thank you!

I subscribed to you because after watching a bunch of your videos in a row, I really liked your teaching style. As someone who lives in South Africa, it's really difficult to find restaurants that sell authentic, regional Chinese dishes. We have the generic, Westernized dishes served here, so I know that when I feel confident enough to try cook your recipes, I'll be following authentic recipes. the first time I saw souped up recipes is when I looking for dumpling recipe, and I found your transparent dumping recipe .. I just watched it.. and subscribe after that on that time, I thought that you're not just cook it to your content.. but you know how to make it very well. some people cook because they wanted to make a content, sometimes they don't even know what are they cooking. just throw anything on pan. but you're not. either you're used to make it or you did some research about the recipe. and because you know the recipes, you can explain the easiest way how to make every recipes to us.. and I luv that..

I watch your videos because you explain why something is done in a particular way or why to use certain ingredients. It helps me to understand the dish and how the flavours and textures are formed and come together... I always learn something new or have a better understanding of a dish even if I've made it many times before, after learning your methods I have a better understanding... your teaching is a mixture of art and science...

I really like your leaf folding technique. I watch your videos to learn authentic techniques and recipes to cook Chinese food at home. I appreciate that you explain why it is necessary to use certain ingredients or techniques, e.g. stirring the meat filling in one direction or adding hot water to a dough mixture. I look forward to more videos in the future.

I have yet to make one of your recipes due to not being able to find all the ingredients when I go shopping for supplies. I'll need to take a trip to my local Asian market so I can make one soon.

My Bf & I started watching your videos early on in the pandemic. Initially to help calm us down for bed at night but once we followed one of your earlier dumpling recipes, that sealed the deal. We’ve learned so much about cooking from you. Chinese food has always been my favorite cuisine, love how diverse each dish can be, def much more than the take out most Americans grow up with. They were informative, but not boring, you made it clear what products you use and sometimes alternatives, which helped a lot in the more rural areas without access to Asian markets.
