This came out fabulous. One (male -- less seeds) eggplant was enough for four of us as an appetizer -- we just picked at it with wooden skewers. The honey soy was a great sauce.

A simple recipe I would try! A little adjustment: I would serve the sauce as a dipping sauce instead of drizzling that, so the eggplant would remain really crispy and not become soggy.

I first saw this in your FB page and saved it. Today I made it and half drizzled with sticky honey sauce and rest I had without lunch..both my hubby and MIL loved them...exactly as you said, they too agreed that people who don't eat eggplant would be finger-licking this dish. Salting the eggplant has nothing to do with bitterness. It's a process of getting the extra moisture in the eggplant to weep so that you can dry it down with a paper towel. That prevents it from having too much moisture, and results in crispier eggplant.

I tried this recipe today but with Airfryer. Works Beautifully!! but i decrease the vinegar a little but as this is to feed my kids. I really wish O can share pictures. It looks good and crispy!

Marion, I'd love to learn how to better look after deep fry oil so can reuse. How long before you dispose of it? Yours always looks super clean and new.

Use a coffee filter to filter the oil after its been used and cooled down. Throw it out of it starts to taste stale or it has an odor. I keep old empty oil bottles to store the reused oil in there. I also write on the bottle what the oil was used for so I know of its suitable for vegetarian meals or if it was used for something with a strong flavour like fish.

Natasha Dohnt I do the same. The only thing, if I used the oil for frying fish or chicken, I usually stick the bottle in the fridge. In that way it stays fresh longer.

This is a winner!!! I only have orange marmalade so I used about a tablespoon or so, in place of honey and surprise!…turned out to taste like tamarind which is by the way my fave!😋 eggplant stays crisp even after a couple of hours but I think everything will be gone in a couple of minutes haha! so soooo gooooood!👌

Hi Marion! Just wanna say I love your channel so much and thank for all your amazing recipes! Every time I want to make something new, I always check your channel for inspiration! Btw, I think the panko breadcrumbs you're using is the one with the yellow packaging if I'm correct? That brand tends to have really big chunks of crumbs so I stopped using it a few years ago and switch to a brand called Yutaka. It's much finer as it is so no need for that extra step of pounding it yourself. They're also really common in asian supermarkets so you'll probably be able to find it easily :)
