This recipe was a huge hit in my house tonight! I subbed chicken thigh for the breast (hubbie said that pork would be great too), Used cornstarch for the flour, and cooked on the stove. The thing I love about recipes like this is that I usually have these ingredients in my pantry. Thank you!

Traditional style marinates your chicken in soy sauce and rice wine vinegar about 20 minutes. Not to much liquid because when you have everything ready to go, toss the chicken with cornstarch. Sauté. the chicken and onions and ginger and garlic until chicken is done. Mix chicken stock and cornstarch and😢 whatever together and pour over chicken to create sauce. It thickens in a couple of minutes as you cook it. You can add hot peppers and peanuts for Kung Pau or cashews a bit of sugar or broccoli etc to this. So you take the same base and substitute pork for chicken or shrimp. Use strips of beef and broccoli and or mushrooms. All Chinese stirfry has only one recipe. So you can use whatever your family likes. Fresh green beans a😊re great this way. So now Cheryl has made you professional Chinese chefs.

I’ll definitely try this. Today I made your Chinese chicken sweetcorn soup. Tweaked it slightly cos hubby had prepped celery and leek as well as spring onion. End result was stunning. I added some very fine noodles. Gave our neighbour a big bowl. He didn’t believe it was home made 😂😂. Thanx for sharing the recipe.

Looks delicious! I've just made this a while ago, and thus I have a little hack for you: pls roast your (roasted) cashews in the oven at a 200°C for some 8 to 10 minutes. To add them, just before serving. It's really worth it! I've learned that from Pailin Chongchitnant on here (Pailin's kitchen). She also has tutorials on soy sauce, coconut milk, fish sauce and oyster sauce. Beeing from the north of Germany, us europeans often don't have much insight on the different brands and quality. I lately bought 4 different oyster sauces. And, since I have very lovely neighbours, I even went over and had them taste-testing them, too. It was amazing, how different they taste! Living this close to Hamburg, we have a lot of asian grocery stores here. If anyone from the Pinneberg-area is watching: our local store is just fantastic!

Don't use too high a heat with sesame oil or it can burn, traditionally it's added towards then end of cooking. Sesame oil is never used as a base oil for frying due to its low combustion point

Hiya Cheryl. I was once told by a local Chinese restaurant owner that Sesame Oil should only ever be used as a condiment or flavouring at the END of a dish, and never to COOK with it. What are your thoughts on this adage, please? 🇬🇧🇬🇧🇬🇧

That’s what most people do, put it in at the end. It doesn’t have a high smoke point so not good for frying. What she used though - Lee Kum Kee Sesame wok oil - is only 30% sesame oil. It’s designed for frying stuff in

@@Equinoxious342 3 hours on low in a slow cooker is not "cremated". And the chicken had already been seared to seal in the moisture. A little less cooking time may be preferential but to be assured that the meat is properly cooked when cooking at low temperature in a slow cooker , 3 hours is advisable.

@@Equinoxious342 I’ve made Alex Wilkie’s takeaway oil many times. It’s really good mate. I add it to end of fried rice and chow mien etc. But I don’t agree the chicken would be cremated at all. Slow cookers cook at such a low temperature that it eventually just falls apart like pulled pork. It won’t ever burn

My roommate loathes ketchup (can you imagine?!) and I'd have to use something in exchange. Do you think tomato sauce or tomato paste would be better?

Believe it or not,but cashew chicken was first made in Springfield Missouri, USA. It’s not exactly a traditional Chinese dish.

Ketchup? Flour? No self respecting Chinese take away would use these! Instead cornstarch and oyster or fish sauce! Never cook with sesame oil! It is a condiment! Use a high heat oil like peanut or any vegetable oil!

@@HopeLaFleur1975 It seems like a fair question, though. You don't like Chinese food, you see a cooking video for Chinese Cashew Chicken, you watch it and then say you don't like Chinese food. Does that not seem strange to you? Just because someone questions you, it doesn't mean they're grumpy.
