It's Friday of one-pot week, which means by now your dishwasher probably thinks it has gone into early retirement. That doesn't have to stop just because you're making dessert! With today's tactic, you can make a big batch of delicious chocolate cupcakes in just one bowl.
Sarah's Tip of the Day:
To get started, be sure you have your baking staples: Sugar, flour, unsweetened cocoa powder, baking soda, baking powder, salt, buttermilk, vegetable oil, eggs, and vanilla extract. These cupcakes are nice an moist, so they're great with just a dusting of confectioners sugar, but if you want to whip up a batch of frosting [LINK: www.marthastewart.com/318727/s...] be my guest! Makes 36 to 48
Ingredients
3 cups sugar
3 cups all-purpose flour
1 1/2 cups unsweetened cocoa powder, plus more for pans
1 tablespoon baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1 1/2 cups buttermilk, room temperature
3/4 cup vegetable oil
3 large eggs
1 1/2 teaspoons pure vanilla extract
Directions
Preheat oven to 350 degrees. Line standard muffin cups with paper liner. In a large bowl, whisk together sugar, flour, cocoa powder, baking soda, baking powder, and salt. Add buttermilk, vegetable oil, and 1 1/2 cups warm water; whisk to combine. Add eggs and vanilla extract and whisk until smooth.
Divide batter among muffin cups (filling each about 2/3 full) and bake until a toothpick inserted in center of cupcake comes out with a few moist crumbs attached, 20 to 25 minutes. Let cool in pans on wire racks, 5 minutes, then transfer cupcakes to racks and let cool completely. Frost as desired.

I've tried three other highly liked recipes on KZbin for chocolate cupcakes and this is the ONLY one that lives up to its promise! I'm so relieved, I thought I was going crazy with those other recipes but this one actually WORKS! Love it, and I used a regular cup of coffee instead of the warm water, it brings out the chocolate flavor better:)

If you want to boost the chocolate flavor in the cupcake batter, you can substitute the 1 1/2 cups of warm water with 1 1/2 cups of warm fresh brewed coffee

You can buy buttermilk powder. Just mix it with water and there ya go! The brand I use is SaCo and it lasts practically forever in the fridge.

Add about a tablespoon of white vinegar to 1 cup of milk (that's the ratio) and let sit for 5 minutes and you have buttermilk :)

Just in one measurement cup, add 1 cup of plain milk (whole milk) and to that add 1 tablespoon of plain vinegar or lemon juice, let it set for mm 5-10 minutes, and don't stir too much just like two times and that's it, so you can get the results :)

You can use regular milk mixed with some lemon juice or vinegar and wait at least 5 minutes to allow it to curdle. Have even used almond and soy milk. Hope that helps!

+Marii Díaz u can use light olive oil, try not to use extra virgin as it will affect the taste of the cupcake. :)

You can and nothing will go wrong. But if the recipe calls for 3 eggs for example you just have to crack three eggs, weigh them and then use half of their weights.

you could just divide the recipe by three and voila! 12 cupcakes! :) (or 12,66.. something..) :) or divide it by two if that's easier and make 19 :)

I guess not . The reason why people use buttermilk is to make the cake fluffy . I don't think the evaporated milk would lead to same results.

What is the different between baking soda and bicarbonate of soda? I've been looking for baking soda in grocery stores but bicarbonate of soda only mostly they have..

Thank you for your responses. I do know what I'm talking about. They are two names for the same thing. Baking soda is the name in the U. S., bicarbonate of soda in Australia and a few other countries. However, baking powder is different from the two which is baking soda (bicarbonate of soda) and an acidic ingredient, whereas baking soda is just an alkali.

I would NEVER get the warm water directly from the tap. Because bacteria thrive in warm water, even from the tap, and you really don't want that in your dish.. (even though it's being baked I wouldn't risk it).. So I would recommend getting cold water from the tap and heat it up on the stove, in the microwave, or even in a kettle. That's just what I do!

There's fluorine just so you know in tap water. Also, after baking, being under high temp in the oven, bacterium die.

Serapia Bonjour Where I live, the water is perfectly safe to drink and use cold directly from the tap. I just wouldn't ever use it hot from the tap. I'd prefer to heat it up on the stove or in the microwave, just to be sure that there's no bacteria thriving in my delicious cake. Also, I want to be able to eat the batter.. ^^ But that's just my personal preference! :)
