Well, you all seemed to like the first video - so here's number two! It happened to be the same meal that I had my folks over for, and this is the dessert I did for them. It was an Espresso Chocolate Cheesecake and it was really rather easy and tasty.
EVERYBODY WAS HAPPY!

Thanks you all for your great comments and tips. Belle tried this recipe last night and put just a little cornstarch in and still we both agree - never again. Also we will both try the water bath way. I do that with other things like cream brûlée but I never considered it for this. Will repent and change my ways going forward 🤣. I’m having fun though!!!!

It's kitchen chemistry, and a desire for a wonderful end result, you deserve that. I never cut a cheesecake until the third day, cheesecakes need to mellow in the fridge and boy do they taste better, they ripen like cheese, try that with a plain cheesecake, because you will enjoy the aha moment when you notice your cakes fully developed flavor, and texture. You can cut it on day two if you just need to try it, but don't leave it out of the fridge long, then wrap it back up till tomorrow same thing don't leave it out long it is all part of the texture development. My mother would ask me from 50 miles away how soon can you bring me a cheesecake, she would want it for the next day, well I couldn't trust her so she would get it on day too or thee and she would always ask why are your cheesecake's better than mine? I said mine are never left on a counter, and mine are aged. She would eat a six-pound cheesecake inside of 4 days and never gain an ounce. Have a great time with your cooking.

Great video. Jerry, you are a natural on camera and Susan you compliment him so well. My favorite line on the video was When Susan asked after baking the cheesecake how he would know which trick kept the cheesecake from cracking and Jerry replied “I don’t care”. What a treat and treasure these videos will be for your children and grandchildren in the years to come. Susan you should get in front of the camera too, you are part of the treasure. I have made cheese cake forever lol. The trick for creamy cheese cake is wrapping your cheesecake pan in aluminum foil, placing cheesecake pan in the large lasagna pan filled with 2 inches of water. Your cheesecake will never crack and will be very creamy. Cornstarch is added so the cheesecake holds together. Love your videos!!!

Papa the cheesecake looked amazing!!! I have to admit though I've never seen a recipe that called for cornstarch. 🤷‍♀️ the eggs served as the binder. There are hundreds of recipes without the cornstarch!! Thanks again for a great video and looking forward to the next one.🥰 God bless you and Susan😇🙏

Yeah Papa, I am so excited that you are finally on KZbin. Your wife is correct the hand beater and later the handheld electric mixer were used, my grandmother raised me and she did almost everything by hand even pleated skirts for me and they were beautiful and simetrical. So excited to watch and learn from you and your sweet wife.

So happy to see you guys start a channel! Thanks Belle! My home economics teacher tought us to use cream of tartar. My son is allergic to corn. Make lots of cheesecakes for holidays and such. The size cheese cake you mad 3 tsp cream of tartar and open door method.

Looks really good. I have never heard of putting cornstarch in the batter. It’s been sometime since I made a cheesecake. Wrap the baking pan with foil and place inside of a larger pan. Set in the oven and our boiling water into the larger pan. Can’t wait to see what type of cheesecake you make next!

And So I went there to check it out. Oh my gosh, it is absolutely beautiful. You have done this with absolute perfection. Your words were priceless and unmatched. I’m similar to Sarah in that I didn’t cook before I got married, and it’s been trial and error during our first year of marriage. (Tomorrow is our 1 year wedding anniversary!) I have really enjoyed watching you on Luke and Sarah’s families channels, and am excited to watch your videos! If you bake your cheesecake in a water bath, it won’t crack. You use aluminum foil to cover the bottom of your cheesecake pan to keep water from getting in to your cheesecake when you bake it! The cheesecake looks delicious with a nice cup of coffee! Yummy!

The cheesecake looked great with the ganache and whipped cream. As for the danger of burning your hand on the rack as you place food in the oven, Using silicone covers on the edge of the rack will prevent that. I bought a set on Amazon, and I love them.

That looks really good! 🤤 I’m going to have to try that recipe. First off, I think it’s great you went and bought a KitchenAid, so you could bake! My theory as to why the cheesecake cracked is, because you over mixed the batter. With baked goods, you only mix ingredients, until they’re just blended. I’ve made a pumpkin cheesecake several times and most times it doesn’t crack, but I have had it happen and sometimes I don’t know why, except for that reason. The thing with cheesecakes is, though we want them to look pretty, they still taste great, regardless of how they look. After you decorated the top, you couldn’t tell it was cracked. I vote for you to make your Bundt cake! Mother’s Day is coming up. 😉

Nice. I make a lot of cheesecakes and I realize the secret is to not overbeat the mixture. I made one two months ago and it came out perfect, absolutely no cracks. I did all the things you did and at the end cracked the oven door open with my wooden spoon and left it. I also did not open the oven door at all while it was baking. I believe I baked it for 70 minutes and then I opened the door a crack and just left it until it completely cooled. I was so proud of myself.

I don’t usually make cheesecake, but this one intrigues me. More than the cheesecake, I love the conversation between you and Susan! You sound great on camera. First, I started following you as I always loved you and Susan visiting and chatting it up in Sarah & Solo’s videos. I believe you beat too much air into this cheesecake which makes it bake more like a soufflé which makes it rise and then cracks. So, slow down the mixer and make sure to continually scrap down the sides of the bowl to incorporate all of your ingredients…leaving no clumps of cream cheese after it’s baked…you’ll see clumps if the cream cheese wasn’t creamed properly (always make sure your cream cheese is room temperature and don’t over beat your eggs in). I also use flour instead of cornstarch in my cheesecakes. Continue using both the water bath and leaving the door ajar for at least 45 minutes to an hour after turning off the oven. Baking the cheesecake at a lower temp 300 to 325 for a longer time also helps! I bake my 10” cheesecakes at 300 for 1 hour and 35 minutes. Also, leave it on your counter until it’s room temperature or close to it before placing in refrigerator. Please trust me, everything you do to help your cheesecakes from cracking is worth the time and energy, but they unfortunately still crack once in awhile. The more cheesecake videos you watch the more tips and tricks you will pick up. Natasha’s Kitchen is a great cheesecake recipe and lesson! My mother-in-law taught me how to make her NY Style cheesecake in 1977. I then learned all the tips and tricks over the years by watching many great chefs’ videos, baking on my own for a restaurant and now make over 50 flavors. Happy baking!

Generally speaking, you crack the oven, and after the allotted time, turn of the oven, leave the cake in until the cake is cool to the touch, gently remove and gently place on the counter. Cakes do crack but don't slam the oven, but move the cake before you close the oven, never use corn starch! You don't need to add water to the oven, but you can if it makes you feel better, the cheesecake looks great when served, by the way that is the biggest crack I've seen, keep cooking you are learning what you don't know, and getting greater at what you do know in the kitchen. "A Chef willing to learn, is a Chef at heart" I make cheesecake in the blender in two batches, I like the way they come together better. Bon Appetit

Hello all the way from across the pond! I love your videos and your enthusiastic approach to cooking and food. I would leave out the cornflour. The eggs are the setting agent so they're not needed. I would also wrap foil around the outside of your cake tin. I always place baked cheesecakes in a water pan to cook them. Just so the water goes half way up the tin. As the others rightly say, taste is everything and you can smother with whipped cream or ganache to cover anything!! Sending your wife, your parents and you lots of blessings. I love this channel! I was always taught that having a pan of water under what you’re baking, helps it to bake more evenly. My mother was an amazing cook and baker! She made my wedding cake. We just celebrated our 40th wedding anniversary on May 1st. Also, centering the cheesecake in the over will help. Love you and Susan both! Mmmmmmm that looks awesome!

Yes... I love this video. An yes I'm with papa.. please do not melt ur chocolate in the microwave.... do it in a double boiler way... it makes it taste so much better.... great job. I'd love to have a piece too... 🙂💞

An yes aftr so many years of cookn I too can just about measure it in my head an I'm pretty good with measuring by the size of the containers too. Estimates r my cookn... heeheehee

Also, as a mother of 3 boys 21 18 and 16... I think it would be fun to see you cook all 3 brothers favorite dishes your mother made you growing up. Then ask her what her memory of your favorite dishes were. Same for Susan and sarah and Luke?

I've made cheesecake for years and people ways rave about it. It always cracks but when it settles you can't hardly tell. Yours looks delicious, I enjoyed watching!

It's looks delicious. I think the foil around the pan first tightly in a water bath will help with the top not cracking. But great video.

My Alexa acts deaf when I need her to do something but when you asked her to put on a timer, she gladly did it. I am watching this at 4 am and she scared the life out of me.

Was I happy to see you have your own channel🤗I believe you must actually place the cheesecake "in" the water bath with water mid-way around the cheesecake pan. I'm sure it was superb no matter what. Looking forward to more👍🏼
