40g Cane sugar
40g Cake flour
5g Cocoa powder
*Chocolate custard
3 Egg yolks
50g Granulated sugar
30g Cake flour
300g Milk
20g Unsalted butter
80g Chocolate
*Diplomat cream
Chocolate custard
100g Firmly whipped cream (35%)
*Baking
1. Preheat to 190C / 374F
2. Set at 190C / 374F for 35 minutes and bake for 15 minutes.
3. Lower to 180C / 356F and bake for 10 minutes
4. Lower to 160C / 320F and bake for 5-10 minutes
*Never open the door between 2 and 3 phase!
