I haven't made this dish yet, and I subscribed because I saw the spices you were using. The fact that you used baking powder to prevent the chicken drying out shows you know your way around some seasonings.

It raises the skin's pH, breaking down the proteins more efficiently and making for browner, crispier results. Simultaneously, the baking powder combines with the bird's natural juices, creating carbon dioxide.

Is that two tablespoons EACH of fresh ginger and garlic, or two tablespoons total? The dish looked like it was two of each. Also, I'm curious what the purpose of the charcoal is. The Amazon link says that the charcoal is odorless and flavorless itself, so does it impart some kind of flavor to the chicken?

It’s 1 tbsp fresh ginger 1 tbsp fresh garlic And the charcoal gives it a mild smoky flavor

I would bake it in the oven and the last 2 minutes broil it to give it a charcoal effect
