I really enjoyed the "behind-the-scenes" parts of this video - it looks like Chris is quite well-liked in the office, and for good reason! It's always interesting to hear him talk about what he's aiming for in each recipe - he's concise without being too technical, and there's always a good amount of dry humor mixed in. Looking forward to what he comes up with next :)

@@arsenemercere8059 You can see that BA took a while to learn how to edit for KZbin. Go back two years and look at Claire's videos. They are fine, but boring. They're bland videos that look like they would fit in the middle of Martha Stewarts stuff or a filler for a few minutes on a cooking channel. Now everybody has their own distinct personality that shines through. Think about this - they've had Carla sine 2011 and it was only about 2017 or so that they made good videos with her. I think the breakthrough was with Brad and Vinny. That's when they accepted that they should show individual quirks (Brad vs the English Language, Brad vs attention span) as a planned style.

Making them from a recipe is easy. Making them without a recipe and refining it is a completely different story. The frustration in the background in previous videos was him creating the recipe. I'd wager he was still trying to use sour cream and couldn't nail the lightness of the dough so he was pretty frustrated.

I can make up a batch of twisted doughnuts (milk + butter enriched) in about an hour. It really is one of the easiest things you can deep fry. It's also one of the easiest things to burn.

Made this recipe. I ended adding a lot more flour to my dough because it was kinda wet. The doughnuts turned out good and fried very quickly, mine was only 1 min per side. The star of the show though is the lemon zest in the glaze. It makes ALL THE DIFFERENCE. Never skip the lemon zest. It makes the doughnuts feel refreshing with a nice cup of black coffee. Yumm. Thanks, Chris.

They're definitely easy to make. It's the development process that is hard. He had something in mind and was experimenting a lot, but couldn't get to what he had in mind easily. That goes for all kinds of design phases.

This recipe is legit. I just made it. These are the best home made doughnuts I've ever had. They are bordering on the best doughnuts I've had so far. This recipe made a dozen or so smaller doughnuts, of which I've not eaten atleast 3.

Just made these amazing "yo-nuts" today. And trust me, they were AMAZING! The lemon glaze was fantastic. But I did customize it to my preference (1/2 cup powdered sugar, 1 full lemon zest and 2-3 tbsp water. To the other 1/2 cup of sugar, I added 1 tbsp of cinnamon and made cinnamon sugar donuts). I did replace Greek yogurt with plain yogurt and because I live in a very hot region, my dough was really sticky and not as firm as Chris's. But I just added 1/4 - 1/2 cup of flour more and dusted my doughnuts really well. They were still real sticky even after popping them in the freezer. So I ended up hand-shaping them. They weren't the prettiest looking donuts but they looked super home-made and rustic! And all the uneven nooks and crannies made the donuts extra crispy. Honestly, I'm never ever going back to yeasted donuts ever again 😭💯 Tip: I would suggest serving these warm with some lemon tea or coffee 😊

I think the best thing about those BA videos is that they are not in sterile, empty kitchens made only to present during shows. I love seeing the background action, especially when I can recall seeing Chris practicing donuts in the background during one of Claire's shows.

One of the things that I like about Bon Appetit is that they don't edit out the funny mistakes or the things that happen to the rest of us non professionals, like getting egg shell in the bowl at 3:18.
