1- 1/2 stick of butter
2 cups granulated sugar
1-1/2 cup carnation milk
1-1/2 tsp vanilla extract (optional)

My auntie passed away this year and she taught me how to cook. But it was killing me not being able to remember the steps to caramel. I got the entire Thanksgiving meal prepared, and couldn't remember the caramel. Thanks so much for this. And funny enough, your beautiful voice reminds me of her. This frosting on a spice cake was my favorite growing up. My mom would make it for my birthday every year. She would whip it after it came off the burner to help it cool and thicken. I lost my mom a year ago, and thought I'd lost this recipe too! I'm so grateful I found this video and I'm going to make a spice cake with this frosting to honor her. Thank you!

My mom used to make this all the time. I never stayed in the kitchen to watch her (I always just came after she was done and just fixed a plate). She loved baking. Thankfully she is still with me and will be 70 years old this year. For the last couple of weeks she’s been saying she wants a homemade cake. I’m going to make this and surprise her with this cake. Thanks for sharing!

My granny taught me this recipe. Now I'm the only one in the family that makes it, she has gone on now, & this is our 2nd Christmas without her beautiful presence, so now I will be continuing the tradtion. 💕 kudos u nailed it!!😋😍

Back when I was growing up, this was the only frosting my mom made, she would have a chocolate sheet cake and she didn’t cook the Carmel as long as you did but she would poke holes in the cake, pour the Carmel over the top and then sprinkle chopped pecans! It was delicious, I’m glad to see this recipe!! Thank you!

This took me back as well, I've been looking for this specific recipe forever because my mom did this exact same way but she made us kids stand there and constantly stir until it was ready and for some reason I thought it took forever to make, but she just said 15 minutes😏

Chris you just don't know how many memories you bring back.et me set the stage: My mother's mother (ma) lived in middle Georgia, mother and I lived in South Georgia, we would visit often and when we would visit and turned on the road where she lived I promise you could smell her cooking. She was old school, grew up during the depression, and was a lunchroom manager at the local elementery school.....she could "throw down" in the kitchen with anything but I remember most of all her caramel cakes. Most of the time she had made them before we arrived but I did get to watch her make them from time to time. She made EVERYthing from scratch I don't think she knew what Betty crocker was. She made her cake on cast iron griddles on top of the stove, she used two and would flip them once they were brown and use a plate to trim them once they were cool. She would have 18 layers and toothpicks everywhere! She made the frosting just like you did. When she was in the kitchen she didn't want anyone in there or talking to her she was all business! Thank you so much for allowing my mind to drift back to the 80's for a brief moment, for the duration of this video mrs Chris was my sweet ma!

Lost my mother last year and it has been one of the toughest trials ever. I hurt for you but am so glad that you have such sweet memories to hold on to. I will always say that at scratch homemade cakes and frostings will always be the best. My mom’s biscuits , gravy and fatback is what I truly miss the most. We always had garden sliced tomatoes with it…😋😋😋💕🙏

Thank you, Thank you for this authentic carmel frosting! I lost mine given to me many years ago by a 75 year old church mother. The other recipes for carmel frosting using brown sugar and or Karo syrup is not the old time recipe way. Thanks a million!

I make caramel slightly different. I use heavy cream instead of milk. I brown the sugar in a few tbl of water. Once I get the desired level of darkness, I drop the butter in there (cold) and heavy cream. Then I cook it down. With heavy cream, it won't take as long for it to thicken. I'll have to try this recipe. I'd like to taste the difference in the two recipes. I'm sure this one is delicious as well. 😋😋😋

Thank you for this. I’m going to try it. My Grandmother used to make this back in the 70s. I guess there are several ways to do it, but the end result should be the same- smooth and caramel tasting. I remember her putting some of the granulated sugar in a cast iron skillet and letting the edges of the sugar brown over very low heat. Then she would put in carnation milk and a little pet milk along with the butter. She’d put in a teaspoon of vanilla extract, and stir until it was ready. People would beg her to make caramel cakes for them. I miss that old lady. I really do.

That is exactly how my mom made it and in an iron skillet. She would go out on the back porch and hold that skillet up and stirring it until it cool. I always wondered how she was strong enough to do it. Out of all her sisters hers was the best. I really miss my mom and Granny whom mom learned this from.

There are several ways to make it. I personally use brown sugar because the white sugar often came out too grainy or required a longer cooking time. I've also used, whole milk, heavy cream or half and half...whatever I have on hand.

I just want to let you know I made the caramel cake yesterday. That caramel is my new base recipe for apples cakes and everything. It is really cool to watch white sugar break down to a new substance. Yay!!!!

I had forgotten all about this icing, but remember probably my mother making this when I was little. People used to use evaporated milk in a lot of recipes way back when, I still do. Thank you for posting it!

You are an excellent clean cook! This caramel icing replicates my Mother's, but my Mother mixed her sugar and evaporated milk together first, then she'd added butter and vanilla, equally a long process but well worth the wait. One thing I forgot, I was so happy to see that you make real caramel, people mistakenly make caramel out of brown sugar and call it caramel and I've never eaten a Kraft caramel or any other real caramel out of brown sugar, thats not real caramel, that's a fake caramel, color generated by brown sugar.

Thanks for this! Here's a tip, if you boil the condensed milk for 2-2 1/2 hours in the unopened can you have caramel! Easy, delicious and ready to save and use any time. We do that and it's amazing on the cake. It's a great glaze.

I was trying to get the recipe from my mom, but it was 2am when I was making the cake. I am soo glad I ran across this video. I tried your recipe and it turned out perfect. Ms. Chris I am so sorry for delay I have been in bed until 2pm today. I was and am still exhausted. I bake for friends and I had to cook for my home too. Wow! Thank you for sharing your mother's recipe. When I was a little girl we had a neighbor who cooked the best (carmel) caramel cake I have ever tasted. As an adult I have searched for that similar flavor unsuccessfully. Just looking at your frosting reminds me of that delicious cake. I will try your recipe. About my neighbor/elementary school teacher's recipe. Well of course we all moved away from my childhood neighborhood and she, in her elder years lived in beautiful California with her daughter. She became ill and in her last days had her daughter contact my family and asked specifically for me . By the grace of God I spoke to her daughter and was able to give my love to her mother while she was still alert. Amazingly when I asked for the carmel cake recipe she was alert enough to say "no". We all laughed and I knew my hope of experiencing anything so delightful in a cake was gone. Until now because just listening to your description of what the consistency should be like is what I remember about the thickness and smoothness of that frosting. OH MY GOODNESS!!! THe first I remember this frosting being made was my Mother making this before World War 2 started, and she put this on her big chocolate cake . I probably was only 4 years old. I can still taste it im my mind's eye. Bless you my dear, for bringing back the memories of my Mama's baking.

When my grandmother made caramel icing, she started with just the sugar in the pan and cooked it until it melted into a liquid. After the white sugar became completely liquid and browned, then she added the other ingredients.

I think I have watched most of your videos and have cooked several of your recipes. My favorite so far that Ive cooked is the gumbo recipe and your butter roll. My boyfriend was so incredibly happy about the Butter Roll recipe because he told me about his grandma cooking it when I had never heard of it before and I researched until I found a recipe and the taste brought him back to his child hood! He was so happy. I stumbled across this Carmel video today and my mouth is watering. I am so proud of you and I don't even know you. I feel like you could be someone that is part of my family. Oh I would love the butter roll recipe, I used to help my Aunt make them as a child. She's passed on and can't remember the recipe. Most ppl are not familiar wth the butter roll when I've talked abt it. Delicious!

You are my grandmother in my heart and there is just something about you that touched my spirit the first time I ever watched your videos about 2 years ago and every since. My sister just asked me tonight if I knew how to make a caramel cake and I told her the truth....I don't, but let me study how to do it and I got you. You were the ONLY ONE I could think of that could get me the results I need. Omg...i just did it and i so happy.... and it taste so delicious my kids kept saying they smell caramel what is I'm doing and I told them I was making caramel from scratch.... when it was all said and done the Carmel was finished and it tasted great it was so smooth and creamy and I think you so much because this would be my first time making a caramel cake...💋💋💋💋💋💋💋💋.... and on the funny side I hope my caramel cake one day find me a man or husband😉

My grandmother’s sister used to make this for her chocolate cake and none of us were allowed in the kitchen at all, only her one other older sister. I’m 79, my mother is 93. My grandmother and my father are all long gone so I have no idea when I last thought of this wonderful caramel icing. I’m definitely going to be making it soon!

Ms Chris I think you are a God send. I was longing how to learn how to make caramel icing and boy I was blessed to find your site this morning. Nothing like home made Carmel icing,I use brown sugar, it helps with color and a stronger taste. Love your video's,💜🙏

Ms. Chris I thank you from the bottom of my heart for this recipe. My mom is almost 90 years young and used to make this all the time.Some of her recipes she can't remember. Another of our old time favorite's was a Lane cake. Have you ever heard of it? When ever my sister's and I get together we make one. the recipe is quite involved. Mom was blessed with 18 beautiful children, 10 girls and 8 boys)(mom was born and raised in Alabama) 3 of my sisters and I still enjoy baking from scratch. Watching you cook is a pure pleasure!!! Do you remember where you got the red silicone spatula from you used in this recipe? Many blessings to you:)

Such a beautiful cake. I make a carmel cake every Christmas a tradition in my familt started by my mother. We use to carmelize our sugar first the boil it in the evaporated milk and butter. Your cake is a beauty!

My momma used to whip this frosting up in no time flat. I know she could make anything taste great. She would stir up her pie crust up in a jiffy them bake the dough on a upside down pie pan. Then fill shell with pudding pie filling. No mixes back then. Everything was totally homemade. Love love you.
