I make these up in Wisconsin with brats. I leave out the bacon from the cream cheese mixture and wrap the filled brats with a slice of bacon😊. Heart healthy in a carnivore way.

@ChudsBbq Drop one in toasted roll of choice and it's a meal. Keep up the great work - very much appreciated by someone whose been cooking outside for going on 50 years - I started at 6. Now you have to Chudify smoked green chile tomatillo pork posole.

@ChudsBbq Brad - here's a recipe I suggest humbly that you consider for green chile posole pork. 3 or so pounds of boneless pork, shoulder or sirloin roast, cut into large about golf ball sized cubes. Sirloin if not too lean works really well. Toss / coat in neutral oil, SPG, and corn meal that is first dry toasted in a pan. Arrange on cookie cooling rack and place on your Chudbox - i use a homemade McGyvered 50 gallon drum smoker over mesquite lump charcoal and AZ oak i cut while hunting / hiking. Cook off at 300 to add some smoke and set seasonings and cornmeal. Set aside. Same time if room or next direct heat roast off tomatillos, Anaheim or pasilla jalapeño Serrano chile mix of choice, as well as white onion and garlic. Toast / roast to prep for sauce. Make sauce with dried Mexican oregano, cilantro, liquid - chicken stock or beer as needed - and S and P. At same time, roast and par cook a few thirded or halved zucchini, yellow, and / or chayote squash. Set them aside. Finish sauce in a Dutch oven. Add pork chunks and braise uncovered on Chudbox or barrel cooker, adding beer for moisture as needed, until fork tender. When pork is nearly done, add roasted squash veggies and canned drained Mexican hominy. Bring it all up to temperature and right texture. Finish stew with a good glug of apple cider vinegar. Serve with drizzle of crema, chopped cilantro, and chopped chicharones for crunch from local carneceria. (I live in Tucson, AZ, lots of great ones.) It's FANTAYSTIC.

Bradley, long time sound engineer here. If you will rotate the lavalier lapel mic you're using 180°, so that it is facing down instead of up, it will still pick up all the sounds you want it to, but ot will be less sensitive to mouth noise. (Mouth noise is the unwanted "moist" or "smacking" sounds that our lips and cheeks make while talking, along with breathing noises while not talking). Some lavaliers are especially sensitive in that frequency range, like Blue Yeti. Since lavaliers are omni directional, it will still pick up everything you need it to just fine and will reduce those unwanted sounds without the need for an obnoxious foam windscreen or a dead cat on your lapel.
