The pizza recipe is a mini version for one person, and it can be frozen and stocked in large quantities. Especially good for meal prep or quarantine cooking!
Pizza dough needs long fermentation time, and the most efficient way is to make it all at once. MINI pizza is good for breakfast. For lunch/dinner, you can bake a few more to mix and match different flavors.
The recipe can make 10~11 pizza, and then one by one is wrapped in plastic film to store in the freezer.
When it's time to serve, no need to defrost. Just pop in in the oven and bake at 220C for 8-10 mins, until the cheese melts. It’s easy and fast, right? And it's delicious!

Pizza dough (can make 11 mini pizzas, 80g each)
6 g instant yeast
10 g granulated sugar
10 g salt
24 g milk powder
320 g cold water
20 g vegetable oil
500 g high-gluten flour
Pizza ingredients
1 can of pizza sauce (not all used up)
200 ~ 300 g Mozeruila cheese
2 garlic grated
2 tablespoons olive oil filling to make yourself
Mentaiko sauce
30 g mentaiko
40 g unsalted butter
20 g Japanese mayonnaise
1 tsp lemon juice
