By the time I sat down to write this message, I ate two and my tongue was still burning from eating freshly baked hot rolls. I never care about making croissant dough just because of all the rolling and resting. But you make the process much effortless. I can't thank you enough for sharing this with us. This looks easy to make! But I have some questions. Can we work the dough in a hot/warm environment? Does the dough need to be kept cold?

Yes, preferably in colder environment. My room temp was around 21C. Can be done in a warmer environment as well, you just need to work faster before the butter melts.
I love Kouign-amann, but seems so difficult to make. this morning bun looks like Kouign-amann, looks so delicous 😋, must give it a try! btw, since I started using Kerrygold, never go back to other brand🤭. Luckily, American costco carries it with decent price.
