This is a very tasty loaf, flavoured with a lovely swirl of cinnamon. Made in a Pullman loaf tin it is the perfect slzed slices for toasting for breakfast. Raisins could be added into the dough if desired for extra flavour and texture. The loaf can be made in a traditional loaf tin too, for larger slices.

Just bought the 1 pound Coleman loaf pan. Wish I had gone a little larger. Looks excellent oh definitely going to try!

The name "Pullman" was derived from its use in the compact kitchens of the Pullman railway cars Three Pullman loaves occupied the same space as two standard round-topped loaves, thus maximizing the use of space in the small Pullman kitchen. Thanks for the video and keep cool . . . use ice packs if necessary. You are having Florida weather.

Hi, Yes the tins were invented for just that situation. As for the weather, we are now at the end of our 2nd week of very high, for us, temperatures. No end in sight, apart from a momentary diminution on Tuesday. I suppose we shouldn't complain, but that wont stop me.... LOL

worst part is we've had days of over 60% humidity to go with it, though honestly this year hasn't been as hot as much as it has been in the past. I've seen it 85F at 2am for weeks on end and 120F in the shade on our back porch for over a week in a row before. This year we've only had maybe 6 days of 100+ yet, though August is typically the worst. Funny part is Red Bluff which is about 2 hours north of here gets even hotter than that. 125-130 is pretty normal up there. The north wind is really dangerous here and it typically is so dry that it just evaporates all the water right out of you in no time at all. Everybody always says "oh it's a dry heat, it's not that bad." having lived here and on Guam and in Mississippi I can say that a little bit of humidity is far better than none, though super high humidity and high heat is it's own kind of hell. It never got THAT hot in Biloxi but 85F and 90% was normal, Guam about 90F and 100% was normal. Here in the summer 105F and 10% humidity is the norm, though it also gets down to single digits at night in the winter sometimes, though teens to low 20s and 40F during the day is normal during winter... much like Portugal in a way, hence they say we have a Mediterranean climate... just a little hotter.

Thanks for this recipe Geoff. Hope it cools off for you soon. We have had a few 90+F (32C) days here in Wonderful Wisconsin. Right now it is 77F (25C)and clear skies. Stay well.

Hi Geoff ...oh the old pulman loaf happy memories of my grannies baking...this is a nice idear with the swirls ....oh goodness its toooo hot for us even with t the sea breezes , how are you coping?xxx

Hi Henrietta, the loaf is very good indeed, but I can't eat much... diet you know. Currently a sweltering 28C outside and warmer still indoors as the sun hits all day long. I am wilting, but Tuesday promises a brief respite.

Geoff Cooper same here ...we have a very old cob cottage 12c ...@ it is cool inside ...they knew how to build in those days ,3ft thick walls ....warm in winter winter @ im still... moaning....roll on tuesday xxx

that cinnamon bread would make some amazing french toast, add a little Prosciutto to go with it and omg.. If you are ever making anything that's fruit with cinnamon, like apple pie/sauce/butter or muffins or anything, I suggest using at least 50% if not 100% Vietnamese Cinnamon. Vietnamese (Saigon) Cinnamon has a nice kind of fruitiness of it's own that really works well in things like that.

Hi! I really want to make it but my loaf tin is much smaller. It's a one pound loaf tin, do you think that would work the same?

HI Jellypoot. This recipe would be far too much for a one pound loaf tin. However I recently found a very informative video which gives details of how to scale a recipe to fit different sized loaf tins. For information, should you wish to do the calculations my pullman loaf tin has these dimensions 33.02 x 10.16 x 10.16 cm. which is 13x4x4 inches. Your recipe is missing salt in the dough. 2 tsp works best
