My late MIL used to thinly slice her sprouts (like tiny cabbages), boil in a little water until just tender and then toss with S&P and butter. Once she burned them slightly, and my gosh they were yummy!

Excellent tutorial for those who overcook their sprouts, the cutting a cross in the stalk makes a big difference in getting the inside stalks cooked through. At Christmas I like to serve up with bacon lardons & chestnuts sautéd in butter, a splash of balsamic & plenty of black pepper … ‘balls of doom’ become a gastronomic delight!😆😂 Thanks as always Rik. 👨🏼‍🍳👌👍😋

I think the problem when we were growing up was, our mothers would put them on to boil at 9am, to be served at 6pm. I never had them as kids at home, but did have them at a sleepover. Despite being total mush, I did like them. As an adult, I worked out how to cook them as I like them. Prepare as you described, then put in a freezer bag with a splash of water. Put in microwave for between 1 and 5 minutes, depending on how many you have. You want firm, but not crunchy. Years ago, a friend and her husband came over for dinner. They requested a roast, as apparently I do the best roast. I prepared veges, including sprouts. She cleaned her plate. Afterwards, she said she hated sprouts. I asked why she ate them, given the rule in my house is, if you don't like it, you don't have to eat it. She said, they were actually really good. Her mother was one that boiled them for a week. She liked the firmness of them being steamed. In fact, when the kids came along, she was regularly cooking sprouts, and the kids loved them too! My husband hates carrots, hates corn, hates pretty much everything resembling a vegetable. Yet, quite regularly I get met with "can we have sprouts with dinner?". Go figure! They are my absolute favourite vegetable in the world, so if he wants to eat them every night, I'm happy to cook them every night!

Did mine in the pressure cooker a good while back which is basically steaming and what a difference. I do think that sprouts now don't seem to have the same flavour they used to have but maybe that's my age. But steaming does make them taste far better. I have a pair of old fashioned colanders with a lid and the three inner pots I do often do the spouts etc in those it beats boiling or roasting. The pressure cooker ones came about purely by accident mind, one Christmas with the oven full and all four hobs on the go they had to be cooked somewhere :))).

Sprouts are my favourite veg. I cook em in a pan with oil and water and a tight lid. Just a shallow layer of water, which eventually disappears and then they get roasted by the oil. It works very well. I cut them in half to get the most contact with the pan, which gives them a nice scorch. When they are almost soft, you can take off the lid so the water boils away.

Very pretty! Steaming is also my method of choice for this vegetable. Steaming in a pan with a little broth also gives good results. If you want to enjoy this vegetable in a completely different way: Steam with a little onion and broth. Season with pepper and nutmeg. Place in a blender and blend with crème fraiche to make a puree. Goes great with meat and is not so intense, which suits people who are not fans of this cabbage. 👍

Good one Rik, my enjoyment of sprouts came when someone baked them. I haven't heard of having them at Christmas, I think its a great idea for the year the in laws are coming😂.

Hi Rik, great recipe m8. I always add some fennel to brassicas and use the water for the gravy (OK, guilty, granules!). I also never cross the stem..... (Ramsay taught me that).

Lovely. Was going to chide you for not cutting the cross, southerners never seem to do that. When I first came to the US 20y it was as if Americans thought they were poisonous. Now they are on every menu backed, even seen as a toco filling, surprisingly good, keep up the good work. Hoping for some interesting Thanksgiving side dishes.

I am so going to eat a whole bowl of sprouts, thank you very much. Sprouts are where I do go overboard on Cook's Prerogative. A frightening amount never makes it to the table. This video shows that a recipe doesn't have to complicated to be perfect. I'll just share how I steam mine. I use the Instant Pot but I don't use the pressure function. Even Steam at 0 minutes can make veg too soft for me and there's no way to check partway through. What I do is add a cup or two of water to the liner, set the veg in a steamer basket and use the Saute function with a glass lid. The water boils quickly and gives a lot of steam and it's easy to pull them out when you've got your desired doneness. I've make every kind of veg including a whole head of cauliflower. Thought this might help someone with US Thanksgiving on the horizon if you're doing a big meal and the oven and every burner is occupied.

Prefer my sprouts a bit more green matie. Did many a Christmas day prep with sprouts from aged 6. Where you got extra food and treats for helping out.

The humble sprout is a luxury item in rural Queensland, unfortunately, because I love them but my age pension doesn't stretch that far.

I love sprouts, hated them as a kid because my mum boiled them to death as I used to say and they and the couli ended up ike mushy water. By trial and error I learn to cook sprouts and couli to perfection. I use a steamer too.
