A little nostalgia never hurts, I remember when treacle was a household staple. Ginger cake and gingerbread men that you could break your teeth with, it is so good that it all hasn't completely died off and you are doing your bit to save some of it :).

So true. I made gingerbread men in my Home Economics class as I live near ‘the home of gingerbread’. One of them got a bit broken so I piped an icing ‘cast’ on it and told the Examiner the gingerbread man had a broken leg. I got an ‘A’.

The memories that came rushing back. I know I always seem to mention my nan. but she really was a great cook, and she would make these two at a time to feed everyone, and the biggest pan of custard you could imagine. A delicious sticky ginger cake with custard after a fabulous meat and potato tray bake.

@@mrdangiles90 Also, many biscuits and cakes now contain palm oil, or other vegetable oils. Much better to bake your own and use butter, as ingesting too much in the way of veg oils can be detrimental to health.

We had a Mark's & Sparks here for several years. They had a lovely Jam ginger cake. Dry ginger, chopped candied ginger, and stem ginger in ginger syrup makes it luscious.

A trick I learned from my mother is to include lumps of stem ginger (comes in syrup in a bottle) in the batter for extra bursts of ginger when eating.

I’ve never made a ginger cake like that for years. Occasionally, I’d buy a McVitties Jamaican ginger cake for a treat. For a bought cake they weren’t too bad. In fact McVities used to make some nice cakes. One was a Dark Orange Cake, which I used to make a very decadent dessert. Can’t find in any of the shops these days, which is disappointing. A recipe for a Dark Orange Cake would be nice Rik, if you have one? xxxx

As is …. Rik , or with butter. Mug of coffee for me. Many people like a drizzle of lemon icing on it with lemon zest. If you want to be really snazzy at Christmas, cut the cake in half horizontally and add a layer of coffee buttercream.

If you can't find 'Golden Syrup' in your local shops you can make your own at home with water, sugar and Lemon... There are recipes on the internet on how to make it.

One thing I can never find a proper recipe for is Ginger biscuits that I had as a child in the 1970s. Most I have found just taste of sugar and no ginger, and they do not have the deep cracks etc. Do not get me started on the state of supermarket versions!

All you need to do is cut back a bit on the sugar,and increase the ginger,you can grate some fresh ginger,as well as ground ginger,and don’t forget to add salt,it’s a flavor enhancer,and it makes the sugar taste less sweet.😊

Made a couple of batches of Yorkshire Parkin recently, will likely make a third this weekend. This looks like parkin with extra flour instead of oatmeal, but can still vouch for how ruddy delicious it is, especially after a few days when you can toss a cube up at the ceiling and it will stick there. Don't though, that's a monstrous waste of good cake 😂

If you watch The Great British Bake Off, you heard Illiyin say that she was just going to make a Jamaican ginger cake when they were asked to make parkin in a technical challenge. She did well too, if I remember correctly. 😂
