Making Classic English Fool (2 Kinds) - Gooseberry Fool and Rhubarb Fool. Such an english classic flavour combination. East to make. You can make it in advance to be prepared for your dinner party. Who doesn't love fruits, cream and custard?

Recipe Breakdown
Green Gooseberries 285g (Tops and Bottom taken off)
Caster Sugar 57g (20% of Main Ingredient)
Elderflower Cordial 57g (20% of Main Ingredient)
Rhubarb 355g
Juice of 1 Orange
Zest of 1 Orange
Caster 71g (20% of Main Ingredient)
Strawberry Essence 71g (20% of Main Ingredient)

Roast with Foil at 160c for about 25 minutes.
For the Cream
600g Double Cream
300g Creme Fraiche
+
Cold Custard/ English Cream/ Creme Anglaise
