INGREDIENTS:
1kg of lamb (on the bone)
3 large onions finely sliced
3 large fresh tomatoes chopped
1 kettle of boiled water
2 medium potatos, peeled and cut into med size peices
1 cup of oil
1 tablespoon of the following:
salt
chilli powder
coriander powder
garam masala
turmeric powder
1 cinnamon stick
2 black cardamom and 4 green cardamom pods
1 peice each of frozen ginger & garlic
5 green chillies sliced length ways
1/2 tablespoon of dried fenugreek leaves
fresh coriander to garnish

My mom was an amazing cook and I’ve been missing her food so much. She used to make the best Aloo Gosht my toungue has ever tasted but she passed suddenly in August 2022. She didn’t leave any recipes behind and unfortunately I never got to learn. I can’t wait to try making this. Wonderful! If you like it this way. Everyone cooks it differently. Try browning the onions a bit more, preferably red onions instead of white, sear the mutton more that allows the moisture to lock in. Rest as you feel right, personally I would add ginger and garlic before adding the mutton. That is to let the mutton soak in the flavors before it locks after searing. Tomato goes in later as that will slow down the cooking. Try getting "Nutmeg", just smell it and you will know how amazing it will make your dish. Keep more coming! ❤

Yes this a good receipe. I grew up in Durban where there is a large Indian community and as Jewish boy who loves curry this matches the curries my aunt made for the family on a hot Saturday afternoon sitting outside under a shady Jacaranda tree. I'm making this tomorrow and I know it will be good.

Hi M R, thanks for your comment. For smaller pieces reduce the cooking time by maybe say 15/20mins. All depends on the meat too and not just the size of the peices as it varies! Hope that helps!

OMG Shamza. Dribbling.... Presentation spot on as usual and cant wait to try this. You've taught me so much. I've noted some 'comments' below mention the cast iron casserole pot that you used. I have a couple of 'Le Creuset', oval shaped pots, that have served faithfully for over 35+ yrs. So easy to clean and still look great! This looks great but I have a question, is the garam masala not bitter as you didn’t cook it with the oil?

Not at all. It's added right at the end as an aromat to enhance the flavour of the curry and doesn’t need cooking.

Hi Shamza.. love all your recipes and so do my family! 😊 One thing, my lamb keeps on shedding and breaking at the bhunning stage.. do you know why this might be? In the receipe does the meat need to be slightly slightly hard before the bhunning process? Thanks!!
